I love pancakes, but I could never make them.... I bought a cheap pan from Tesco around pancake day 1 year, which I think was about £3 or £4 and I use it only for pancakes. It's even hidden in our kitchen "cupboard of doom!" so hubby can't find it and use it! Even though we have stupidly expensive circulon non stick pans, I definitely find the cheaper one better!!!
I teach 5-7 year olds and every year we make pancakes with the children. They don't always turn out right, but they devour them with great gusto, because they made them themselves, so you could go down that route. I'm a big believer in children getting involved in the kitchen.

Seriously, I stumbled across it one day looking for egg free baking recipes (actually, the other recipes on it are awesome too - I've tried the cookies and the Victoria sponge so far) and these were AMAZING. They even worked with milk replacements and gluten free flour too (which is a REAL test on a recipe)Officially saved enough to cover the cost of our wedding! :A0 -
Now the secret to yorkies, I have discovered, is *lots* of eggs. I used to follow Delia's recipe which recommends a single measly egg - and I would wonder why they didn't rise. My new method is:
- whisk up 3 eggs, 250 ml milk and 250g flour
- distribute in a "patty tin", filling each hole about 2/3 of the way up (you should get 10-12)
- Cook at 200 degrees for 30 minutes
Perfect every time.
My Yorkshire recipe which has never let me down is:
heat some oil in Yorkshire pudding tins/bun tins (230 degrees) - to cover base of tin
whisk 1 egg and 55g plain flour together (add a pinch of salt)
whisk in 55ml milk, then whisk in 65ml of water
distribute in tin
cook until risen and golden brown (usually about 20/25 mins)
