    Possession - What's Spanish Pork Stew? And do you have a recipe? I'm always short of pork ideas, but we love pork.

    This is the first week I'm going to try the "Mothership" roast, then use up the leftovers throughout the week.

    Dinners:
    • Roast pork, apple sauce, gravy with roast potatoes and root veg, savoy cabbage.
    • Asian style stir-fried pork and noodles.
    • Roast peppers stuffed with spicy pork, chorizo & mushrooms, salad
    • Bubble & squeak and poached egg
    • Courgette carbonara, garlic bread and salad
    • Weekend away meals - woo hoo this will include a meal at the Loch Fyne Restaurant & Oyster Bar :D ....and possibly a fish supper sat at the loch on the next night :p
    Lunches:
    • Lentil & tomato soup, left overs or filled sandwiches / rolls. Box crudit!s and portion of fruit.
    Breakfasts:
    • Bacon, eggs or porridge or yogurt and banana.
    There's not much in for snacks but I still have half bar of Old Jamaica hidden :cool: A square of that is plenty, very lush.

    DS is away this week and I'm skint (yet again!) waiting for payday so I'm living out of fridge/freezer/stores

    Breakfasts - porridge, egg on toast, cheese on toast, beans on toast

    Lunches - as above (apart from porridge)
    1 packet of value curry noodles
    1 tin of soup with bread roll from freezer

    Dinners - made a big batch of pasta bake last week with 2 chicken breasts and lots of shrivelled veg to use up from fridge so whats left of this will feature quite a few times! In no particular order:

    1. piri piri chicken breast, last of salad, oven chips
    2. pasta bake
    3. chicken kiev, oven chips, tinned sweetcorn
    4. pasta bake
    5. Cajun chicken breast, potato wedges, tinned sweetcorn
    6. hot & spicy pork chop with rice & last of tinned sweetcorn & some frozen peas
    7. the last pasta bake!


    Should only need to buy 4 pints skimmed milk £1 and bananas 68p. I have 2 tins of pineapple in cupboard so will eat that as snacks/evening pudding

    Wed ys pies pots n veg
    Thur hm quiche n jackets n veg
    Fri leftovers
    Sat out for dh 40th bday!
    Sun sc bolognaise.

    Not v exciting. Will make extra pizza dough too as just got a brand new chest freezer so space for extra freezing x

    Right - need to get back to planning meals on a Sunday for the week ahead. Really worked for me when I used to do it, just got out of the habit over Christmas and having had some rubbish, mad weeks at work !

    Tend to have fruit for breakfast and HM soup or a salad for lunch.

    Also, been doing day on/day off dieting, which means I've stuck to around 500 cals on a Mondays, Wednesdays and Fridays. Been flexible on the days when necessary. Feel better for it, not felt particularly hungry and have lost around half a stone in the last 3 weeks. Need to lose about another 3 stone, so still a long way to go, but every little helps :)

    Monday : Omelette and lots of salad
    Tuesday : Sticky Salmon with lots of veg (never made this, bit of an experiment with a Nigella sauce that's worked well with sausages and ribs !)
    Wednesday : Out for half term, so will be eating out at lunchtime with DD2 as a treat, so something light in the evening, like an omelette or soup.
    Thursday : Bacon-wrapped chicken breast with sweet potato fries and veg
    Friday : Pork chop in cider with veg
    Saturday : Chilli with vegetable rice
    Sunday : Beef in red wine casserole with roasties, veg and possibly Yorkies if the family insist (probably). And a pudding for those who want it if MIL is with us for dinner.

    Will see if I can stick to this - DH is the obstacle, really. Either he doesn't fancy what's planned for the night, or he finds a 'bargain' his way home and says he thought he'd make tea for us. Which - although a lovely thought - throws a spanner in the works as far as my meal planning (and healthy eating/diet !) is concerned.:mad:

  • Another Newbie here.

    Need to start using up loads that’s being left behind each week because we’re shopping each weekend when there is already plenty in. Some meals “might” be mis-matched, But its still a hot meal.

    Breakfast: is normally cereals or biscuits for OH before work in the morning.
    Lunches: Sandwiches, Wraps or rolls.

    S: S/C lamb joint with mash pots, greens & yorkies!
    M: Sweet & sour Chicken breast with HM chips.
    T: Lamb curry with chips for OH & Lamb mini roast for me.
    W: Lasagne, side salad & garlic bread.
    T: Sausage, chips and beans.
    F: Spag bowl.
    S: LO’s from Friday.
    Future goals:
    Become debt free.
    Beat Depression.
    Be happy & healthy
  • Last week was another write-off in terms of meal planning, we had a bit of damage to the house following the storms so after dealing with that a couple of days we couldn't be bothered cooking a big tea, on the plus side the replacement meals were cheap enough (cheese on toast etc)

    Roast chicken, mash, broccoli, carrots, HM yorkies and gravy
    LO chicken curry & rice
    HM spicy veg soup with crusty bread*
    Cheese & Tomato gnocci
    Hot & sour pork noodles
    TITH
    HM Fish & Chips with HM tartare sauce

    *probably common knowledge around these parts, but I made this soup last night and after blending realised I hadn't put enough potato in it to thicken it as I'd like. Did a bit of google-ing and found a tip of grating potato straight into the soup, cooking for a few mins then blending again to help thicken, tried it and it works a treat! :)

    Wraps are so easy and quick to make and they freeze really well.
    This makes 8 I normally double this as I'm lazy and saves making another batch so soon :D
    350g plain flour
    1 tbsp oil
    1 tsp of salt, sugar and yeast
    200ml of water, warm works best

    Mix them all together to form a dough and kneed until smooth. Split the dough in to 8 equal sized balls. Roll out as flat as you can get them. Heat up a dry frying pan and dry fry them 1 at a time for 2-3 minutes a side. You will know when they are done as little brown bubbles will just start to appear.
    Freeze flat and pull out as you need them, they defrost on a plate in 30 minutes :)
