stew bags of veg are £2 or you can make the equivalent contents up, swap them for other seasonal veg. This can make enough soup for at least five lunches, cook and freeze in portions. :) If like me you are happy to eat veg soup two meals a day it will keep in the fridge for two and a half days.
  • Oh, I keep veggie soup in the fridge for at least a week, sometimes longer

No, sometimes I use marigold (veg)stock, otherwise just the veg.

My fridge is very, VERY cold. I have it turned to the least cold setting and still anything on the bottom shelf at the back freezes. Yet another appliance I can't afford to replace.

Are you absolutely certain that it's on the turn by the third day? Even shop-bought soups have a use-by date of at least a week on purchase. Reboiling over and over might change the taste so I'd be reluctant to do that. In any case by the time you've done that there will be no Vitamins B or C left in it. I generally just reheat very gently and keep it on a really slow simmer until I'm sure that it's piping-hot.

My fridge isn't on the coldest setting because then my crisper contents freeze. Hmm, maybe thats what I'm doing wrong. Thanks B&T.
