  • I love this thread!! soooo glad I found it, I am always always going to the shops and its drives me to feeling like :mad: I do a monthly shop and end up always going to the shops or having the dreaded takeaways:eek: not good at all.

    These recipes are fab but I do have just one question tho. OH is getting really fed up with potatoes just lately and he is also allergic to cheese. Could I still make, say a lasagne without the cheese? or would it taste like yuk? I love lasagne but my DD has never tried it and my OH is allergic as I said.

    Always moaning about the meals and its getting me down now, its bad enough being in debt (that makes me depressed) but now this.

    Can he it Quark? If so then you can make Lasagne with Quark or alternatively just make Lasagne with white sauce and not cheese (can he eat eggs? You can do a lovely souffle sauce with white sauce, cooled a little, whisk in a couple of eggs and layer on top- this is nice on moussaka and bobotie). You could put grated cheese on top of 2/3 for yourself and DD. What about Canneloni made with lasagne sheets - you could fill it with bolognaise, cover with white sauce and again cheese on top for you and DD. Make sure to put flavouring in white sauce -eg nutmeg or poach bayleaf and peppercorns, onion in milk.

    Instead of roast we have lemon chicken and potatoes.

    potatoes, chicken thighs and lemon wedges in a roasting tray. Great cheap 1 dish roast meal :)

    Pasta carbonara

    ala weezl

    500g pasta
    25g bacon diced
    45g cheese
    15g parmason
    1 tsp of garlic

    Boil pasta, when nearly cooked fry bacon and garlic in a separate pan till cooked, add 100ml of the pasta water to the bacon. Add cheese to the bacon mix, Stir, season to taste.
    Drain pasta, put in pan and bacon sauce to it. Very cheap, quick and easy to make. Its lovely.

    cheese onion potato pie/ tuna pasta bake/ stir frys to use up leftover meats and veg/stews that lasted a couple of days

    Hi sausagesandwich,

    Ours are tuna pasta bake:

    -Cook the pasta shapes and drain.
    -Add cooked broccoli, sweetcorn or other veg of your choice.
    -Add in tinned tuna, season with lots of black pepper and herbs of your choice.
    -Put into an ovenproof dish and pour over a white/cheese sauce. -Top with grated cheese, breadcrumbs or crushed crisps and pop into the oven until piping hot.

    And minestrone soup:

    -Melt some butter and olive oil in a pan and cook some bacon until it begins to brown (make sure it's not too fatty as the fat doesn't really melt into the soup.
    -Add finely chopped onion, plenty of crushed garlic and diced carrot.
    -Let it cook for a few minutes then add in either tinned tomatoes or passata and reduce the heat.
    -Leave to sweat for about half an hour.
    -Throw in some basil (add plenty and I use dried in winter), black pepper, then add stock (and a chicken stock cube if homemade is not strong enough).
    -Add diced courgette and finely chopped leek.
    -Leave to simmer until all the veg are almost cooked.
    -Throw in a good handful of pasta (I use fusilli, the twisty one) and simmer.
    -When the pasta is cooked, check the seasoning and stir in a dollop of tomato puree.
    -Serve sprinkled with grated cheese (it's meant to be parmesan but I often just use cheddar) and homemade bread.

    Sausage Casserole:
    1 pack of sausages
    potatoes
    carrots
    onion
    gravy powder
    water

    Brown off onions and sausages before putting everything in the oven/slow cooker.

    I have used the MrS basics frozen sausages before, but it is obviously better with better quality ones if you can get them reduced. A VERY cheap meal overall. :money:

    Ours is tater ash or potato ash if you want to be posh

    1lb mince beef, diced potato, onions and carrots plus stock and I usually make suet dumplings to go with.

    Then the following day the leftover stew is used as a filling for meat and potato pie. Never costed this but two very cheap meals. J

    Pasta bake, what goes in it depends on what we've got in or how much money we have had but at it's most limited pasta, a tin of tomatoes, an onion, garlic and topped with grated cheese. If we have them some chopped mushrooms and bits of bacon are a tasty addition or chopped up cooked sausage is nice too.
