Mini Omelettes - 5 eggs, milk, whisk and put in a 12 Yorkshire pudding/cupcake tray. Put in the oven at 200 for 10 minutes, sprinkle cheese and put back in for 10 minutes. I freeze them using greeseproof paper and when needed I defrost and reheat in the microwave for a minute.
Mini Toad in the Hole - I use MrA cocktail sausages (36 for £1) I use the 12 Yorkshire pudding/cupcake tray, 1 sausage per toad in the hole. A bit of fat and put in the oven at 220 while I prep the batter (2oz wholewheat, 2oz plain flour, salt (optional), 1 egg, 1/4 pint water, 1/4 pint milk) split the batter over the 12 sausages. Cook for 25 minutes. Again I freeze between greeseproof paper, and defrost and reheat when needed.
