    No, I don't cook them before freezing. Mincing the meat whilst it is still semi frozen just makes it quicker and easier to mince. I leave them in the fridge overnight to 'bloom', then bag & freeze on the following day. This is advice I picked up from the sausagemaking forum.

    Ok, thanks for that. I've got pork in the freezer that I got for making sausages. Thought I'd need to cook them before I re-froze them.

    Another step closer...The Sausage Book arrived today. Only problem is I don't have any meat in and I don't really fancy the shops at the moment. It's a war zone out there!

    Is anybody in here making their own sausages ?
    Is it easy and not too messy?
    Does it save or cost money?
    How would you clean up an ancient mincer that you found in a shed ? LOL!

    Sorry, can't help with the amswers. Just wanted to say that I'm glad you asked, as I too have been thinking about making my own. I have a metal hand mincer already, but don't want to spend too much on other equipment, as we don't eat them that often. Don't know where to start though, so I'll look forward to reading the replies :)

    Hi mardatha,

    If the mincer is very old and rusty it might be difficult to clean up to a standard where you would be happy to mince meat in it.

  • Hi! If it is an old spong type mincer they clean up easily and then can be oiled with olive oil.
    Sausages are fun to make but not really cheaper, but what is good is that you know what goes in them (ie no sawdust!) and the sense of achievement.

    A cheap £40 sausage maker works well unless you start making loads like us, then you can pay around £200 for one.

    Most butchers shops will sell you the skins (go for natural) and seasonings & crumb. Then just have some fun!
