    I love home-made sausages, so much nicer than shop bought. I've just got a cheapy manual mincer/stuffer from Lakeland and manage okay with that.

    My everyday sausages are normally 2/3 shoulder & 1/3 belly (depending what's on offer or yellow stickered) mixed with breadcumbs, water & herbs/spices. But if you're making your own you can add pretty much anything as long as you stick to the basic ratios.

    I haven't tried this recipe yet -but think I should ...

    TURKEY SAUSAGE

    makes 2lbs
    1. 2ft small casings
    2. 2lb turkey meat -mixture of dark and white
    3. 2tsp coarse salt
    4. 1tsp ground black pepper
    5. 1/2tsp dried thyme
    6. 1/2tsp dried sage
    7. 1/2tsp dried marjoram
    8. 2tbs white wine
    • grind the meat through the finest disk
    • mix in all the other ingredients with your hands
    • put the mix back through the grinder
    • stuff into casings according to your machines instructions
    • twist into links and refridgerate over night
    • then seperate and freeze
    I find that cutting any eat into cubes and then sticking in the freezer for about an hour -or until firm makes it mince easier ;)

    ooh and when you have minced and made your mix I test the seasoning by cooking a small piece in a dry frying pan before stuffing into the cases ... don't forget that the flavour will increase slightly when they have stood,
    hope that gives you somewhere to start :D I do have other recipes if you need any..

    I've bought my sausage maker from here and my casings from here. The butchers are back today, so DH and I will be makin' sausages tomorrow :j

    Hiya,

    I would like to start making my own 100% meat sausages as I find it difficult to find any without all the added nonsense they tend to add to the ones you purchase in the shops.

    I'd appreciate it if someone in the know could point me in the right direction in regards to sausage making kits, machines, casings etc. Some of the machines I've seen cost hundreds which I think is a bit much seeing as it's just me and the OH.

    Any sausage makers to the rescue?

    You can use a piping bag to make them. Heston Blumenthal did.

    Have a look at this Homemade Sausage thread for some ideas ;)Penelope Penguin has recently made sausages and posted a lovely picture on post 95 too. that had me drooling. Hopefully she'll be along soon to give you lota of advice. Good luck I'd love to do it myself it'd be lovely to know whats in your bangers :D
