I love sage with pork, personally. Done simply with a little bit of oil and rubbed over a pork steak, then grilled.

I usually make a pork terrine this time of year, so much the same as a meatloaf really.
I add finely chopped red onions which have been gently fried with a little crushed garlic.
I then put dried Herbes de Provence with black pepper and salt to taste.
For the terrine I would add various things to make layers - leeks, asparagus, chestnuts (great for Christmas).
For the meatloaf, I would simply add salt, black pepper, Herbes de Provence, and the red onion garlic mix.0 -
for pork meatloaf I would use sage or thyme, but any mixed herbs would taste fine!0

sage and chopped chives perhaps? Apple sounds good. I've got some Pork and Apricot burgers in my freezer - the ones we had 2wks ago were very nice.0

Sage is a classic with pork, there are also some lovely italian combinations like pork and rosemary or pork and fennel seeds which would make a more unusual meatloaf.0
