    Coconut milk can be used in a Thai curry or similar...I have two cans for just this....must use!

    Ground rice? Hmmm...possibly some kind of rice pudding?

  • I did mine on Sunday. Felt so nice to have clean tidy kitchen and cupboards. I had some baskets that things had been haphazardly put in so I sorted all those out to make things easier to find and not just rammed in. Give it 3 hours and the kitchen was a mess again but at least inside the cupboards was tidy haha!
    I made pizza to use up some pizza sauce and some flour we had. We also had some left over chicken and meats for toppings from the fridge.
    My partner did great a whole block of cheese and put it on his pizza which was meant to do me a few meals this week but i'll let him off... especially as he felt sick after!!
    I've put a list of everything in my cupboards on spring pad which is an app i have on my phone and iPad. This will make it loads easier if I end up shopping on the go to know what herbs/spices and other essentials I have in the kitchen cupboard I have. I'm terrible for buying things 'just in case' as I don't want to get home and have to go back to the shops.
    The main things I need to use up are 3 bags of rice, 3 tubs of ground cinnamon and lots of curry and other seasonings.
    I'd love some ideas for...maca powder (I have 2 massive packs of this and can't even remember what it was for!!) dried fruit and nuts - lots of these but I can just use for snacks for work to use them up a bit, quinoa and dried mustard powder.
    The passionfruit curd is definitely getting used on a pavlova next weekend that I'm going to share with my mum.
    Determined to use up some of my food mountain and keep this list in check!!

    Hi Soworried How about rice cake - it's very nice
    Ingredients

    • 4oz Butter or Marg
    • 5oz Caster Sugar
    • 2 Eggs
    • 3oz Self-Raising Flour
    • 3oz Ground Rice
    • 2oz Ground Almonds
    • 1 tbsp Milk





    Method

      1. Preheat oven to 170C/fan 150C
      2. Grease and line a loaf tin with baking paper.
      3. Cream butter and sugar together until pale and creamy. Beat in the eggs, then fold in all the dry ingredients followed by the milk.
      4. Place into the loaf tin and bake in the centre of the oven for 1 hour or until a skewer inserted into the centre of the cake comes out clean.
      5. Leave to cool in the tin for 10 minutes then carefully tip out onto a wire rack to cool completely.

      Thanks for the suggestions on coconut milk etc.

      Just checked the can again and it's coconut cream (dah!). I'll just use less and/or water down.

      We used up one of the cup of soups today to make the spicy sauce.

      Meatballs in a spicy sauce with onions, mushrooms, peppers, grated carrots, spring onions and garlic. We had rice with it.

      That sounds like a good recipe fruittea, I would just need ground almonds :)

      Have a look at this link, lots of rice flour recipes on there, basically seems you can use it as a substitute for wheat flour in gluten free recipes

      Yes I would give it go with brown flour - might be healthier!


      I've just made two quiches and two carraway cakes (have three jars of caraway - so will share with a neighbour - plus used some old rice to make pilau rice - which was nice for diner and a bag is stored in the freezer.
      Still couldn't resist buying three butter nut squashes at 49p in Aldi. Planning to have lots of soups in the next few weeks.

      There was a butternut squash recipe on one of Jamie's money saving meals episodes, worth checking out

      I am going to trump everyone by finding some almond oil I remember buying when I was at university over 25 years ago - complete with original price label ( 20p ) .
      Still smelt quite strong - but is now in the bin
