    Xmas Saver!
When I have cooked previously as an I want to impress meal...

Starters - Chicken and pear poached in white wine and cream sauce (10 mins)

Main - beef in red wine, Jacket Potato (or could use mash) with posh carrots (20mins prep plus 3 1/2hrs cooking)

Sweet - toffee fruit and cream - prep in morning - chill in fridge

    (based it on 2 people)
    --Starters --
1 x Chicken breast - chopped into bite size pieces
1 x pear chopped, (can leave skin on)
    1 x glass white wine
    teaspoon butter
    4 tablespoons double cream

To serve - crusty bread / french stick / petit pan rolls

    to make-
1 - Melt butter in frying pan
2 - fry chicken to almost cooked
3- add pear to chicken and cook through to pear soft and tender and chicken is cooked through
4-add wine and boil gently - keep stirring
5-Add cream, simmer slowly till you get a caramel colour

Serve with the bread of choice

    -Main-
1/2lb stewing steak - in chunks
4oz bacon (streaky, back, lardons) - chopped up
    4oz mushrooms - sliced
    1 tablespoon flour
    2 tablespoons oil
    1 small onion - chopped
    2 glasses red wine
1/2pt of gravy made from gravy granules and hot water
    2 carrots
    small glass white wine,
    1 cup orange juice

    =To Make=
    1. melt oil, fry the bacon till cooked - drain and put into casserole dish
    2. Fry onion - till golden - drain and put in with bacon
    3. Put flour in plastic bag, add meat and shake to ensure coated over
    4. Fry beef till cooked and drain - add to casserole dish
    5. Make the gravy granules up to 1/2pt with hot water, then add red wine and stir
    6. Pour liquid over the meat and stir well, you can add red wine or water if you think it looks thick
    7. Bake in Oven for 3hrs - Gas 3
    8. Add mushrooms for last 30mins of cooking

-Add the jacket pot's in the oven at same time -

    -Preparing carrots-
    1. Peel and wash carrots
    2. Cut into strips
    3. Pop in saucepan with white wine and orange juice
    4. Allow to boil then turn to simmer (about 10 mins there ready), the juice boil down and give the carrots a smooth glaze as well as a contrast orange sweet taste

    --Dessert-
    4 brandy snaps
    100 ml of sherry/peach shnapps/brandy
fresh fruit - Kiwi, pear, tin of mandarians (drain off juice)
    Small carton fresh double cream.

    1. Break un brandy snaps per dish
    2. Pour the alcohol between the 2 dishes (this tend starts to melt the brandy snap
    3. top with sliced fruit, (keep it to about 3 fruits)
    4. Whip cream till stiff peaks
    5. Place cream over the fruit so it creates a seal
    6. Leave in fridge
