making a turkey stretch!!!

    I'll have to be honest and say that I couldn't make that amount of meat stretch to the number you have to feed. I'd also add in a gammon, or massively up the amount of pigs in blankets you are offering.

    At the minute, you have a joint which serves 2 adults and 2 children, or 3 adults with normal size portions. Even bearing in mind that you have 3 adults who eat child size portions, you are trying to get 2 or 3 adults and 5 child size portions from it. So each person will be getting a quarter to a third of a normal size portion of turkey and to replace the missing turkey either 2 or 3 cocktail sausages as you currently aren't doing enough to do 3 sausages each. It's going to be very tight even if the adult who hasn't RSVP'd doesn't turn up.

    Am I missing something here? Admittedly I've never cooked a turkey, but if I roast a chicken a 1.5kg one does for 4 adults with good size portions, so why is a 2kg turkey crown, that is only breast, without the 'wasted' weight of carcass, wings or legs not enough meat for 6 adults?

    Does turkey shrink or do people really eat humongous portions just because it's christmas?

    I think the usual rule of thumb for turkey is to allow 450g of meat per person if ordering a whole turkey, 350g if ordering a crown and 250g if ordering a breast. So on those numbers, OP is a bit short even for just the 6 adults and assuming she isn't allowing the children to have any :D

    If there is no bone you'll probably be ok. My butcher says to allow 8oz per person for boneless joints.
    You could play safe and cook some gammon or serve a starter to fill people up a bit.

  • I'd up the pigs in blankets a bit - especially if they are those tiny cocktail ones - either get some more or use normal size sausages or at least decent long chipolatas, otherwise I think the meat portions are going to be very mean.

    Otherwise just up the veggies. Whole roasted onions are scrummy, very easy, and nice and big for pennies - we normally have one each with a roast. Add in a bag of frozen peas? Yorkshires are very cheap made from scratch and can be quite filling. They go with any meat, not just beef.

    I wouldnt worry - we had our turkey crown last night it was 1.49kg and said serves 3-4. 2 of us had a big roast, i had sandwiches today and there is easily another meal there for 2 of us if not sandwiches again after that. So I would say 2kg would easily serve those people you listed.

    I do actually have a gammon joint in the freezer so might resort to doing that (can boil in cola day before). was also planning on plating up meat and trimmings in kitchen with veg dishes on table. Wil serve me and oh last just incase. And yes, we have 2 starters, 2 puddings and also cheese and biscuits :)

    I'm sure you'll be absolutely fine but a bit of extra veg just in case wouldn't harm. You can always freeze leftovers into portions of bubble and squeak if you're not going to be there. People have suggested mash and I'd do some peas and perhaps a few baked onions (guessing you've maybe already got these in).

    2Kg is heaps..... especially as 3 won't really want much/any. 2Kg /8 = 250grams, that's 8oz, or a large burger's worth. More than enough.

    2Kg/5 = 400g each .... which is a lot.

    You're probably over-worrying, nobody will starve. If you think they might then, your other dishes are roast potatoes, roast parsnips, stuffing balls, little sausages wrapped in bacon, sprouts and carrots.

    You could pick up a cauli, make sure you've enough roasties for an army and/or do some more/other veg - and everybody loves a Yorkshire pudding :)

    We'll probably be having (I am not in charge): brussels, cauli, brocolli, carrots, peas, roasties, roast parsnips, yorkshire pudding, stuffing. We'll have a nut roast and some cocktail sausages and a baked onion.... might have one turkey breast between 2 of us (whatever size they are, never bought one).
