Glad to hear the tooth is fixed- now you will able to smile in all those selfies!!

Finally got the limoncello started. I'd forgotten how long it took to grate the zest off 8 lemons- felt like forever because my meal was waiting to be eaten! I shall stir it for the next 5 days and then comes the fun bit- straining off the flesh, remove the pips and stir what remains into a couple of large natural yoghurts. Yum.

I will try hard to make the gingerbread cream liqueur tomorrow-I'm delaying because I shall have to get out the mixer to whisk the cream...which creates washing up!

Freezing cold here- white over, not so great with 2 dogs to attempt to take me for a quick skid!!on the late night walk.

    Take care

It was white over when I went out with the dogs last night (hard frost- not snow thankfully) so I put those spikey things on my shoes! What a noise! Found it hard to walk on them as I know they are intended for snow. We went the very shortest distance possible....just enough to do what my girl wanted to do! and then came home. New boy is happy to 'perform' in the garden ,thankfully, as he is bigger and stronger.

    Gingerbread CreamLiqueur
    makes about 1.2 L

    bottle (750ml) whisky

3-4t mixed gingerbreadspices (ground ginger, cinnamon, nutmeg & cloves)

    5T hazelnut chocolatespread

    4T icing sugar

    300ml cream

Mix the whisky together with the mixed spices, choc spread and icing sugar until smooth.

Add 200ml cream and bring to the boil

Beat remaining cream until almost stiff and stir into mixture using a whisk whilst it is still hot.

Pour into clean bottles and seal

Liqueur can be kept unopened in the fridge for 2-3 months

Once opened it should be consumed within 2 weeks

    t=teaspoonfuls T=Tablespoonfuls

I made it this morning (finally!)
Mixed everything except whisky together before adding the liquid. I didn't think it was spicy enough so added extra t of ginger and 2 of cinnamon- seemed very chocolatey. No nutmeg- It smelt of nothing, then I saw the packet said bb 2000!!- binned
I bottled mine in reused glass salad dressing bottles- just the right size. (I shall ask for them back! as most dressings come inplastic now!!)

First time I have made it... if liked may well make again but possibly tweak the ingredients

Have tasted the liqueur and it is good... think I would like less chocolate next time....but I could be forced to drink this quite easily!! Have put the bottles in the fridge as instructed. I used double cream (recipe didn't specify) but reckon single would work just as well.

Have looked at the bottles in the fridge and they look... weird, a bit like the bottles you used to get of sand from Alum Bay. The contents have separated out into strata!! with very solid cream at the top. Ermmm.... recipe needs more care than I gave it. One of my friends suggested I beat the cream too much!
