    Thank you all for your help! I mean that most sincerely, as I got totally confused with all the different 'Nut Roast' recipes online.
    She really did love it! spoke to her today and she asked me to make it for her for when she comes to sunday lunch.
    I have loads left so its going to be sliced up and put in freezer. then I can pull a couple of slices out for her and warm it up - I will use a couple of her vege sausages to start a gravy I can portion up and freeze too. Its been a worry for me that the poor kid only gets sausages or a pasta bake for her sunday lunch - so from now on she gets a 'proper sunday dinner', like everyone else!
    I am really so grateful to you all for telling me what you liked and posting recipes for nut loaf!
    and for the red cabbage too - I hadn't done it like that before but though it wasn't the same as the one we had at the hotel - it was near enough and tasted bluddy gorgeous! all down to you!

    I can highly recommend making the Delia recipe red cabbage and then 'lubricating' it with some port. Some 'accidentally' fell into mine and it was lovely :)

    I put some of OHs Merlot into mine - we don't buy port, but I think it may be worth investing in a bottle as it sounds like it would be just the thing in red cabbage, (it may sound weird but back in the day, I used to love a port and lemon - probably the only teenager in town who drank it!)
  • Sorry if I've missed it, but what recipe did you end up using for the nut roast? My daughter is a half/veggie (as in theres very little meat she will eat and no seafood) so would like to try this for her :)

    I'm saving this thread as our 12 year old DD decided to go veggie in September. We were unsure about what to serve her for Christmas dinner as we know there are always tonnes of veg plus a vegetable stuffing. We asked her to have a look out and see if she saw a nice roast which she wanted but she didn't see anything. DH made her a non nut roast so she had something for dinner. Unfortunately, all of us left it at home on Christmas day. "No worries", we all thought, Nanny has quorn burgers in the fridge. Until we served DD's dinner and realised they were still in the fridge :eek:. "No worries" we thought, we have veggie stuffing. "Where's the stuffing Nanny? In the Turkey!"
    I'm so glad DD has a sense of humour. She had a plate full of veggies.
    When it came to pudding time we realised we had also left her veggie Christmas pudding at home.
    We are such crap parents :o

    I made this for DS3 last year as he was veggie, since reverted to eating meat but anyway, recipe my mum gave me, it does taste like stuffing, makes a large amount though, you could half it ...

    Mushroom & walnut loaf

    3 wholemeal bread rolls (I just used what I thought was equivalent from a wholemeal loaf, crumbed)
    2 oz chopped walnuts
    3oz cooked brown rice
    1 large onion
    2 grated carrots
    6oz mushrooms
    1/2 tsp marmite
    3 eggs (does she eat them? not sure what you could use to bind if not)
    salt & pepper
    dried sage & thyme

    Sweat the carrot, onion and mushrooms until softened, stir in the marmite, then combine with the rest of the ingredients,. mix well and bake in a loaf tin covered with foil, 70 mins at 180c

    Basically it was this recipe with a few adjustments.


    Wholemeal breadcrumbs - it needs 10 ounces
    substitute the cooked rice for Ground Almonds and increase the chopped nuts to 8 ounces of mixed chopped nuts.
    leave out the mushrooms and eggs (she doesn't eat even free range ones) so to bind the mixture I used two teaspoons of marmite in a quarter pint of water.
    I used Two tablespoons of Sage .
    see - a bit nicked from everyone elses recipes!

    Glad it was of use as a starting point and your gd enjoyed it. I did wonder about the eggs. Never thought to substitute the brown rice for something else...d'oh! I bought a bag especially, it took blinking ages to cook and I've never used the rest!!

    You ended up by re-creating the classic Cranks Nut Roast recipe http://www.cranks.co.uk/recipes/view/cranks-nut-roast/. This is the one I always use, I vary the mixture of nuts according to what needs using up, but usually use 50% peanuts for economy. Any leftover bread/crusts etc get put into the freezer so that I always have breadcrumbs on hand.

    I rarely use any herbs at all in mine, but I do use a well-flavoured vegetable stock.
