homemade baileys recipe?

sorry if this isnt the right place to post this. my hubby and i have tried to make a version of the above now and havent got it right. the first time we used whisky, double cream, condensed milk, vanilla essence and cocoa powder (sorry not totally sure of the measurements as it was mainly my hubby that made it while i erm sampled it hehe)
we decided it had too much of a whisky taste so next time used 50/50 whisky and vodka and substituted the cocoa for dark chocolate. we've now decided that its too chocolatey and bitter and to also try better vanilla essence in the next attempted as the stuff we bought was the fairly cheap one from asda.

its quite pricey doing all these experiments so was wondering if anyone had any success before a third attempt. oh yeah and ideas about how to make the bitter one more drinkable are also welcomed. anyone know actually how long it'll keep for? :)

    I just googled "home made baileys" and loads of very similar recipes came up. If I was going to make it I would plump for the one on BBC Food website as the recipes on there generally turn out pretty well.

    I would say you need to use vanilla extract not vanilla essence as it has far more vanilla flavour and is natural rather than chemical.

  • My mum makes homemade baileys, not sure of the recipe but she does use camp coffee in it

    DIY “BAILEYS” CREAM

    Makes approx. 1 litre

    INGREDIENTS


    400g tin of condensed milk
    170g tin of evaporated milk
    300ml carton of single cream
    250ml of Scotch whisky
    4 teaspoons of coffee essence

    METHOD

    Pour the milk and cream into a 1 litre jug or bowl.

    Add the whisky and coffee essence.

    Stir together.

    Pour into a clean 1 litre bottle.

    ADDITIONS & ALTERNATIVES

    Adjust the amount of coffee essence to taste.

    The original recipe specified UHT long-life single cream, but this can now be difficult to find. Use normal single cream instead.

    Don’t use your best single malt for this. Any cheap supermarket own-brand blend will do.

    TIPS

    Use the whisky to wash out the milk and cream containers, then add it to the bowl.

    This will keep in the fridge. However, I don't know how long it will keep for: it’s never stayed around long enough to go off.
    If you fold it in half, will an Audi A4 fit in a Citroen C5? :)

    I'm re-surging this thread for a particular reason: Baileys over ice is the one item I looked at with lust during my recent holiday (I gave up sugar in all forms other than fruit nearly 4 months ago!). There are countless recipes online - I remember my Mum making bottles full at Christmas in the eighties! - but none that seem to avoid sugar / syrup / honey / condensed milk / artificial sweetener.

    15 weeks ahead of December gives me plenty of time to experiment in my kitchen! I can predict I will need to boil down cream, evaporated milk, vanilla pod and possibly a v small quantity of dates to go in with the coffee and alcohol but am not entirely sure of quantities of each. I would rather not waste ingredients or end up drinking the creamy-but-less-than-perfect trials, for the sake of not wanting to waste!

    Any tried and tested recipes? One of the key elements is a creamy mouthfeel - too watery and it will just be an "Irish" coffee!

    I've just googled "sugar free baileys" and there are several recipes. I've just picked one at random which happens to be a vegan one - might be worth googling for others.
