I've just googled "sugar free baileys" and there are several recipes. I've just picked one at random which happens to be a vegan one - might be worth googling for others.

That has Agave syrup in it which is still technically sugar, just not refined sugar.

heres the recipe of the one i have been making one for years

    1 cup double cream
    1/3 pint whiskey
    1/2 tsp. instant coffee
    1/2 tsp of cocoa powder
    1 tsp vanilla
1 tspn davinci caramel syrup (to taste) - these are sugar free and come in many flavours but i usually have the caramel to hand so i use that. i cant bear the taste of ordinary sweetener powders hence i use the syrups

mix and heat together in a saucepan, cool and keep in fridge

Thanks, I'll give it a go without the syrup and cocoa powder and use a vanilla pod. Is it as "creamy" as Baileys?

Eta: I've just noticed: there's not a lot of coffee in your recipe?

the cocoa powder has no sugar in and does add something and the syrup sweetens it, you can use other sweeteners if you dont mind them

yes it doesnt say a lot of coffee, thats the basic recipe i tend to play with it til its how i like it. you can add more coffee, cocoa, sweetener etc as you go if you like it stronger

its not quite as thick as baileys but as its made with cream you do get that creamy mouth feel if you see what i mean
