Lemon Meringue Pie

i want a good recipe for one if any one has one. been fancying it for ages, but don't like the look of shop bought ones they always look too yellow. thanks.

    What I usually do is buy the lemon meringue mix which makes the lemon middle bit. I then make my own pastry or biscuit base and my own meringue on the top. This is much nicer than shop bought meringues. I would like to try it with real lemons too though.

    The following recipe makes the most fantastic almond pastry for the bottom and meringue for the top. Try it!

    Almond Pastry

    Sift 6 oz flour onto a work top (not into a bowl) and a pinch of salt. Sprinkle 2½ oz ground almonds onto this. Make a well in the centre and add 2oz castor sugar, 2 egg yolks (the whites can be saved to make the meringue top) and 2 drops vanilla essence. Use the fingertips of one hand only mix together just the eggs and sugar until mixture is creamy. Add 3oz unsalted, softened butter and carry on mixing in the same way but incorporate the flour this time. Knead gently into a dough and wrap in cling film. Chill in the fridge for 30 minutes before using.

    Meringue

    Set a pan of water simmering on a ring and place a glass bowl over this. Add 4 egg whites and 8oz icing sugar and whisk vigorously with an electric whisk. (This can be a bit boring and will take about 10 minutes but persevere!) Remove the bowl and and 3-4 drops vanilla essence. This is now ready to top your pie and is absolutely fantastic and nothing like the shop ones!!! Bake for 10 minutes on Gas 3.

    Delia's recipe for the lemon filling (which I must get round to trying is:

    Measure 275ml(10floz) water into a jug. Put 3tblsp cornflour and 50g (2oz) golden caster sugar into a bowl. Add enough of the water to make a paste. Pour the rest of the water into a saucepan and add the grated zest of 2 large lemons to it. Bring to the boil and then pour it gradually into the cornflour mix, stirring all the time until its smooth. Return this to the saucepan and bring to the boil again, stirring for about a minute. Remove from the heat and beat in 3 large egg yolks, juice of 2 large lemons and then, finally, 40g (1½ oz) butter. This can now be poured onto your prepared pastry base and the whisked meringue spooned on top.

    Delia says cook the completed pie on Gas 5, 375°C,190°C for 45 minutes.

    Yes, should be with the cake mixes and other pudding mix packets. Its usually in a box. Sainsburys do their own brand but there are other brands too.

    Mrs Man makes Delia's one and it's FABAROONI.

    Once it's cooked she turns the oven off, opens the door ajar and leaves oven and pie to go cold.

    I don't know what this does but it tastes nice.

    I always used to use the kit form until Delia's recipe came along. Really it is loads nicer and not at all difficult to do (even for me). I'm useless at pastry so sometimes use a bought pastry case (yes yes, waseful I know) or ready rolled out stuff. Bit of a cheat sometimes when it comes to cooking!

    man, it makes the outside of the meringue crisp as it cools quicker and the inside soft, gran swore by that method.

    right will give the delia one a bash, asked in sainsburys but they no longer sell the kits at this one, so home made it is.
