    He won £75, handed over his chips and received £200.

    How did he place the bet? now I've never been to a casino but i'd presume you change some money for chips and bet with those chips so...
    Did he only hand the cashier £75 worth of chips? or did he hand them the £75 winnings along with the other £125 worth of chips he had but hadn't used (seems unlikely he'd won with his first or last bet which just left him the £75 winnings).
    The £200 could be a combination of leftover chips, 'winnings' and original stake.

    What happens is you go to a table and hand over money. In this case it was £20.

    You are then given some table specific chips that are worth £1 each. After about an hour of gambling he had £75 of chips which was a mixture of £1 table chips and casino £5 and £25 chips.

    To cash in you give the £1 table chips to the croupier and he converts them into £1, £5, £25 casino chips.

    You then take these chips to a "bank" and they hand over cash for them.
