Recipe Ideas - Chicken or Pork

I'm looking for a cheap recipe idea to add to my meal planner. Preferably with chicken, but pork is ok, and can be served with rice.

We already make curry a few times a month, so I'm looking for something different :/

I know I can make stew, but it's getting a bit boring!

Any ideas?

  • Definitely an idea, it's more of a leftover rubber chicken idea :)

    I'm looking for meals to feed a family of 5 for two days though.

    What about chicken or even pork chop suey with some egg fried rice ....Bean sprouts are pretty cheap to buy . You can throw in any odd bits and pieces from your fridge , peppers , tomatoes , onion etc . Perhaps add some sweet and sour sauce as well . A fairly cheap , quick and easy meal .

  • Pork mince stir fry with onions, noodles, soy sauce (sweetened if you'd like a sweet soy dressing, and with chilli if you fancy a kick ), along with any other veg you fancy adding (broccoli, peppers or mange tout work very well IMHO)

    Pulled pork goes a long way, especially in fajitas as you can bulk with peppers, mushrooms. Best cooked in a slow cooker.
  • Daveyjp do you have a pulled pork recipe? I don't even know what cut that it. My family are a little crazy about pork shoulder, so I end up roasting one when they're cheap :)

    A pork or chicken Philippine adobo I preferred the chicken to the pork( I used boneless pork thus overcooking the meat that is where I think my problem came from, chicken pieces, thighs, drumsticks etc where much nicer) when I made it. It was delicious for next to no cooking effort and basic ingredients, I will definitely make it again. How to video below.
