Any ideas for picnic food??

    Love the pizza whirls and the savoury rice - will be trying these ones definitely, would press thanks, but it's still missing!

    For our picnics we tend to just take olives, brie, ham and french stick, occasionally sun dried toms and HM sausage rolls if we've got time and room! Very simple but fills everyone up! Also brie improves if it gets warm, so don't need to worry about cool boxes too much!

    You could try this:

    Oven Baked Omelettes

    Ingredients
    6 eggs beaten
    2 oz cheese grated
    3 cherry tomatos (or 1 regular tomato cut into 6)
    1 rasher bacon but into tiny pieces (easiest to do this with scissors)
    Enough Margarine to grease a tin

    Method
    Preheat the oven to gas mark 5.
    Grease a 6 piece bun tin.
    Add half a cherry tomato or 1 piece of tomato to every bit of the bun tin (dont know how to word it but one in the place you would normally put cake mix),
    Sprinke on some grated cheese and then some bacon,
    Pour the beaten egg over the top and bake in the oven until the mixture is set.

    Nice with chips or as part of a packed lunch.

    chell this is another fave in our house and really easy to make

    Savoury flapjack
    Great for lunchboxes and snacks.

    1 egg
    25g butter
    75g grated cheese
    70g porridge oats

    All you need to do is mix the ingredients ...

    its another one i got from netmums recipe pages :) really yummy and you can add other things to it aswell as the cheese , i tried a sundried tomato version which was really nice :)

    LInda Mccartney sausage rolls are the business, not very OS.

    You can also make scotch eggs/ sasuage rolls with Sosmix i saw on the packet the other day...

    Couscous salad is quite nice

    I am a massive fan of onion bhajias too they are great for picnics

    If you make SOS mix sausage rolls also mix a pack of sage and onion stuffing then mix both together. These make lovely veggie rolls. I have the ingrediants in to make these this week.

    When I used to do buffets at a bar I ran I used to make stuffed loaves, for a picnics I would recommend using the small baguettes you get fresh from Asda, Tesco etc.

    Cut out a hole on the base of the bread trying to keep the piece intact and then hollow out the bread (you can use this leftover bread for breadcrumbs), you need to then coat the inside of the hollowed out bread and the bottom you've just cut off, for this you can use anything from just plain old olive oil to a tapenade or just tomato puree (you don't nneed to put it on too thick just make sure the breads covered.

    for the filling I used to use baked med veg (ie peppers, tomatoes, aubergines, courgettes etc) and some thick slices of homemade ham but you can really experiment with anything you've got. Make sure the hollow is well filled and then but the base back on and press down, wrap tightly in clingfilm and put it in the fridge over night.

    You can either cut it into slices before the picnic or take it as it is and cut it when you get there, it always looks impressive.

    (It's good to experiment with this as you can do loads of differnet things as a filling, for example make a rissotto and stuff the bread with that.)

    Pinwheels of puff pastry and pesto are good too, just buy some ready rolled puff pastry, spread pesto on one side roll up and slice into about 1/2 cm rounds bake until brown and you then have a tasty little snack.

    I'll have to do another post as this one seems to be rambling on.

    An other thing I used to do was when making batches of tomato sauce for later use in pasta dishes and chilli's I would get a load of baby new potaoes and spike then all round with a fork then put them into the sauce to cook (you need to over salt the sauce as the potatoes just suck this up) and when they're cooked spoon them out and you have a different take on a potato salad.

    You can also use the tomato sauce as a spread for bread, all I do is finely chop an onion or two with some garlic, gently fry until translucent and then add as many tins of cheap plum tomatoes as you want or need, season and let it gently bubble until it's really thick (this can take hours but you really don't need to look after it too much). You can freeze what you don't need and use as above for the base of a spag bog or chilli.

    Savory flans or cake's. New idea's... something diffrent! Getting board with sandwiches etc... Thank you.
