    Agreed make for 2 or more, saves time and money

    other way is cooking several portions of veg and freeze as portions so they just need reheating to go with any meal you want
    One day I might be more organised...........:confused:

    I went for a compromise... Roasting a whole chicken and will make stock the with carcass and use some of the leftovers for chicken and wild mushroom risotto tomorrow night (and tues lunch!) and the other half can be frozen to use with pasta and stuff...

    For veg, I have done some roast potatoes and got some of that cheats seasoning for them from M&S so we'll see how that goes. Also roasting some red onion, carrot and mushrooms in the oven with olive oil and a couple of bruised garlic cloves, salt, pepper and some M&S sweet paprika seasoning for veg. Will boil some broccoli up just before the end.

    I did cheat with the yorkies and stuffing as I bought aunt bessies! ;)

    Loving some of the other ideas on here and I will def. keep track of this thread as I wanna try lots of them...

    don't forget that if you overdo the veg, there's always bubble & squeak to be had the following day!

    Can't you just give her the ends of a beef joint? Beef roasting joints are a bargain at lidl & mr S atm.
    Or just give a whole chicken a go?
    What about a lasanga?

    When I cook roast beef for my mum, I give her the end pieces and eat the more pink meat myself.

    I'd either do that for your friend or roast a whole chicken. As long as your oven works then 20mins per pound plus 20 mins should be fine. You can get a meat thermometer for a couple of pounds in Tesco if you want to be sure.

    And generally, just serve her the same as everyone else - if she is fussy then this won't be the first time she has had to make do.

    Sounds to me like a boring, bland meal is exactly the sort of food she would prefer!

    Cook what you want to eat once onions and celery are cooked down they won't be noticeable. I agree with the shepherds pie suggestion

    Carrots take a few minutes in the microwave.
