bit of a freezer week again, have got my first veggie box delivery though so thats giddy!!
sat: turkey sausage, cauli cheese. peas
sun: hm chicken curry, rice & naan
mon: hm spicy bean & veg enchiladas
tues: just me so somthing on toast (and its my birthday :bdaycake: )
wed: corned beef hash, veg
thurs: just me again (OH working, kids eat at childminders)
fri: get new veggie box so work from there- prior planning prevents poor performance!

Well after 5 days of being cooked for I best get organised in what I am cooking, problem being away for one week is stacks of appointments etc this week (usually a couple a week but have 8 this week now already booked possibly more) anyway, will plan around those but may have to switch a few depending on time etc.
I'm also working from freezer, did buy some chicken today as we'd ran out and go through a lot of chicken aswell as a few other things but determined to keep in budget this month so must use up some things, especially that lamb I got cheap as still some left! Alternatives there for the kids when needed, got DSs some fish & chicken today aswell.
Sunday - Toad in the hole with veg and mash
Monday - Out with support group so will get something there
Tuesday - Canneloni with garlic bread & salad (seeing as my lettuce is looking yummy!)
Wednesday - Jerk Chicken with peppers, onions, tortillas and mango salsa
Thursday - Lamb casserole in SC, dumplings and mash
Friday - Quorn fillet with wedges and veg (turkey fillet for DP and DS1)
Saturday - Prawn with veg curry & rice for me, DP and kids HM burgers with chips etcOne day I might be more organised...........

Fri - HM Fish fingers with mash, mushy peas and parsley sauce.

Wed - Pork & Apple Burgers with Oven Wedges, Corn on Cob & Peas
Thurs - Spag Bol & HM Garlic Bread (DH & Kids), Tata Ash & Dumplings(Me & Mum)
Friday - Roast Chicken, Roasties, Veggies & Yorkshires
Saturday - Pasta Cheese with Smoked Sausage & HM Rolls
Sunday - DD2 is 3 so birthday tea for family
Roll Fillings - Coronation chicken (made with left over meat from Fri), Egg Mayo, Home Cooked Gammon Ham, Cheese
Cheese & Pineapple (DD's love this)
Garlic Mayo dip with carrot, cucumber bread sticks.
HM Pizza
Also looking to make some coated chicken nibbles and maybe a quiche
Will also be making a chocolate sponge with fresh cream filling and chocolate fudge icing. Topped with yellow smarties and a My Little Pony (the lady knows what she wants lol)
May make a fruit salad too.
Puddings will be HM rice pudding, yoghurts, fruit, may try banana cobbler (got some nanas looking past their best)
Lunches are packed lunch style (may make 3 bean & pasta soup though)

had a bad few weeks letting things slide - in a low mood which affects kitchen inspiration which leads to ODing on carbs which has led to lower mood, lardiness, lower mood, binge-eating, lower mood, no exercise, etc, etc, etc.... SO here is my mood-boosting anti-lardy week's plan.
Lunches - HM soup or HG salads with cottage cheese or tuna and lots and lots of red and yellow peppers for me. Packed lunches with decent sandwich fillings (egg & bacon/bacon & avocado/smoked salmon & cream cheese/cold sausage & HM chutney/tuna&pesto mayo/cold roast beef &HM horseradish mayo) for DH and similar sandwiches with crudites and HM smoothies for DS1&2.
SuppersSunday: Roast beef with aubergine/pepper/cherry tom kebabs & roast new pots
Monday: Ricotta & spinach quiche with avocado & rocket salad (& new pots for boys)
Tuesday: Baked fish & ribbon veg parcels
Wednesday: HM gazpacho for me, left-over roast beef & roasted pepper wraps for boys
Thursday: HM Meatballs with pasta (courgette ribbons for me)
Friday: Roast cod on puy lentils & tomato & red onion salad
Saturday: Lamb chops with minted peas & feta cheese
Baking: lemon & raisin bars, sultana loaf, banana loaf, carrot cupcakes, chocolate shreddiesIs it home time yet?0 -

Saturday - pasta with spicy tomato sauce and seafood for me/chicken for DH
Sunday - roast pork, roast new poatoes and veg
Monday - toad in the hole and veg
Tuesday – sweet and sour pork (using leftover from sunday) with rice
Wednesday – pasta with duck, mushrooms and plum sauce
Thursday – pad thai
Friday – steak, chips, onion rings and garlic bread0 -

Saturday – pasta with sausage sauce
Sunday – beef steak from our new *meat box* supplier, HM spicy wedges, HG salad; HG rhubarb crumble
Monday – spaghetti alla matriciana
Tuesday – salmon fish cakes, HG dill relish, HG new potatoes and salad
Wednesday – Chinese stir fried veg with almonds
Thursday – DH and I are out for the day, pizza for the children
Friday – DS is due to go away on business, so I’m taking the children to the pictures – we’ll have a take-out on the way home
I’ve made some of Twink’s hobnobs – delicious, DD has made some almond and chocolate crunchies. I have a Victoria sponge to decorate. DD is having in her pack-ups, pittas filled with ham, pate, hummus, cheese, salad, as she likes.

Sproggi-what do you stuff your cabbage leaves with? Then what do you do with them? Sound like something interesting to try...

Stuffed cabbage leaves:
approx 16 cabbage leaves (depending on size)
around half a cup of rice that has been very lightly cooked
2tbsps oil (olive/sunflower)
1 large chopped onion
1lb mince (beef,pork and lamb all work well)
pinch of herbs
1 pint stock (I sometimes substitute with tinned tomatoes)
2 bay leaves
2 tsps chopped parsley for garnish
Place cabbage leaves into boiling water and simmer (covered) for 2-3 mins, drain and leave to cool
Stir fry the onion in the oil until transparent.
Mix the mince, onion, rice and herbs(not bay) together.
Lay out cabbage leaves (if they are small overlap 2) put spoonful of filling into each leaf, then fold sides of leaf into middle and roll into small parcels.
Place the parcels side by side into an ovenproof dish so that they are tight together, if the dish is too large, you can use things like carrots to fill in the gaps.
Bring stock to boil and pour over the parcels, add bay leaves, cover and cook for approx 1 hour 350F/180C/mark 4.
I serve them on a bed of rice or cous cous and cover with something like a mushroom or tomato sauce.
