  • Any chance of the chicken chorizo and cider pot recipe , it sounds gorgeous

    From Rick Stein's Spain book -

    Heat olive oil on a flame-proof casserole dish, place in a whole seasoned chicken and brown on all sides. Set to one side.

    Add chorizo, 2 leeks, 2 garlic cloves, peeled & chopped chantaray carrots, 50g butter, 2 bay leaves and 4 sprigs thyme - cover & cook for 5 mins.

    Add the chicken back into the pot onto top of the veg, pour over 200ml cider cover and place in over on 160c for 1 hr.

    Remove lid, increase heat to 200c and place back in oven for 20 mins.

    When done, remove from oven, place chicken onto carving plate and cover with foil. Place veg on a flame and simmer to reduce sauce.

    Carve chicken, and serve with the reduced sauce and veg and mustard mash
