Am going to be making use of some new recipes this week having joined the challenge to cook through a cookery book! Most are just variations of things I tend to make anyway. I'll mark the ones which are from my cook book as "new".

Sun - Roast pork, roast pots, roast courgettes, cabbage, spinach, romanesco, gravy
Mon - LO pork made into spicy pork patties, HM wedges & salad
Tues - LO beef stew & dumplings (stew in freezer)
Wed - Colcannon shepherds pie (new)
Thurs - HM veg soup (from freezer), jacket potato & beans
    Fri - Fish pasta bake
Sat - Oven baked meatballs & pasta (new)

I am trying really hard to stick to budget this month. Shopped in Ald* last Thursday and am hoping to try and stretch what we have until the weekend (apart from milk and maybe a small fruit/veg top-up) rather than shopping on Thursday again as I usually do.

Anyway, it's school holidays here this week and next and not sure what we will be doing each day so have a list of meals planned but not allocating them to specific days and will just see what suits depending on what we are doing.

Chilli, rice and tortilla chips with cheese & sour cream (made this yesterday and will just heat and eat later...plenty for freezer for another time too)
    Pesto filled ravioli & salad
Sausage, mash, veg & onion gravy
Breaded fish, hm wedges & peas
    Gnocchi with garlic mushroom sauce
Beef kofta curry, rice & naan

Breakfasts will be pancakes, bagels, toast or smoothies.
Lunches will be hm leek & potato soup, ham salad rolls, pitta, houmous & veg sticks or oatcakes with cheese & chutney.

DS1 has also asked to bake biscuits so will do those and maybe a banana bread or muffins later in week.
  • Bit slow this week, but my planned meals are:

Monday: Szeschan (I know that's spelt wrong, but I can't figure it out!) pork noodle stir fry
    Tuesday: beef goulash and rice
Wednesday: chicken and ham pie and mash and veg
Thursday: tuna pasta bake and salad
    Friday: sausage, chips and beans
    Saturday: lamb casserole
  • Morning all, I'm joining in this week, hope I can stick to it, weekends are busy here so I don't plan for the weekend but here's this weeks plan

Mon - chicken breasts, potatoes, broccoli, carrots
    Tues - spaghetti bolognese
Weds - stir fried veg, chicken n noodles
    Thurs - tuna pasta
    Fri - fish chips peas

Change to plan already! Forgot I had a cauliflower in the fridge, so will need to use it this week. It's quite big so enough for 2 meals for me and DH.

Tuesday - stew will now stay in freezer and we'll have a cauliflower cheese
Thursday - instead of the jacket potato & beans we'll be having cauliflower dansk & rice

My plan for this week goes as follows (DD1 will generally eat the same as me, though DD2 is much more fussy so normally have to do something else for her):

Moroccan or [STRIKE]Harissa chick pea stew [/STRIKE]with spinach or green beans and [STRIKE]Moroccan giant couscous
    [/STRIKE] and kale

[STRIKE]Mackerel pasta with sweetcorn (and whatever else i can find that will go with it)[/STRIKE]

Vegetable crumble (also DD1 is making [STRIKE]pizza tartlets[/STRIKE] in FoodTech so her and Dd2 will probably have those for tea)

    [STRIKE]Beans on toast/(Quorn)Croque Monsieur[/STRIKE]

[STRIKE]Quorn HM Lasagne with corn on the cob[/STRIKE]

Quorn Coq au vin with sweet potato (DDs won't eat this)

Will come back to this later in week when i have thought of one more meal, as only have 6/7 there!
