    Yesterday I made Panhaggerty light from the hairy D's eat for life book.

    Recipe feedback - Great way to have a low fat meal with only a small amount of meat in it but a great meaty taste from the smoked bacon I .

    Taste test - Fantastic, tasty comfort food for a cold winters night.

    Score 10/10.

    Will be making this again as it was a hit with everyone.
    I am playing all of the right notes just not necessarily in the right order :D.

    Update from me and the hairy dieters :)

    - the meatballs were good, I'd definitely do them again
    - today I cooked the lamb, spinach (and potato) curry. It tasted fabulous, but for some reason it wouldn't thicken in the oven as the recipe suggested. After 2 hours I took it out and let it simmer on the hob for 45 minutes until some of the excess liquid had boiled off.
    - I've done my own take on their spanish chicken (basically chicken, chorizo, tomato, veg etc in the slow cooker today so it's on standby to be frozen or to be reheated for tea tomorrow
    - there's a sausage casserole (I can't remember the exact name) with gammon and chicken, which sounds fabulous, so that's on my list for this week

    I'm really quite enjoying this. If I'm honest, it's the first time I've made an effort to menu plan and only bought the ingredients I need, rather than whatever takes my fancy when I'm wandering around the supermarket. I've also found that if I plan out and semi-prepare things the night before, it's nowhere near as much hassle as I usually find cooking after work.

    I'm still going with this but have got a bit behind with my updates, what with half term and all the associated palaver.

    I will try and find the time to do some posts later with all my latest cooks and pics from Save with Jamie, including Chicken wings Gangnam style last night, which was a real hit.

    Sounds good. I wonder if you could post the recipe for this please. I'm trying to lose a bit of weight and doing Slimming World but wonder if I could adjust it slightly to fit SW!

    320 calories if serves 4 213 if serves 6
    200g smoked bacon (fat and rind removed) cut into 2cm wide strips
    oil for spraying
    2 medium onions thinly sliced
    20g finely chopped fresh parsley (optional)
    675g potatoes peeled an cut into 5mm slices. I did not peel mine
    5 medium carrots peeled and cut into 5mm slices
    500ml hot chicken stock made from 1 stock cube.
    100g half fat finely grated cheese

    This can be made in a large shallow casserole dish but I made mine in a large frying pan

    Mist the pan with oil and on a medium heat fry the bacon and onions until the onions are soft and brown, stir in the parsley then tip onto a plate

    Put half of the potatoes in a layer in the bottom of the pan, top with a third of the bacon/onion mix. Scatter over half of the carrots and season with pepper. Top with the remaining bacon/onion mix. Top with the rest of the potatoes. Pour over the hot stock. Cover the pan with a lid or tinfoil. Simmer for about 20min or until the veg are tender. Once the veg are cooked cover with the cheese and put under a hot grill until the cheese is melted.

  • Tonight I made the Hairy Dieters sweet and sour chicken.

    Recipe feedback- I used chicken pulled from the carcass off yesterdays Sunday roast. I did not have water chestnuts and substituted them with some halved HG tomatoes.

    Taste test - the sauce was a little sharp but this is how I like my S&S sauce to taste. Another hit in the VP household.

    Score - 10/10

    Recipe feedback - Easy peasy, I prepared everything on Sunday evening and bunged it in the slow cooker before I went to work. Made the dumplings when I got home from work. Unfortunately, the batteries in my weighing scales had died so had to make the dumplings using guesswork!

    Taste test - stew was soooooo yummy, dumplings not quite up to standard, but that was due to the battery incident.

    Score - 9/10 would've got 10/10 if dumplings were as yumptious as they should be:)

    Will make again. mmmmmmmmmmmm

    Today was Lasagne (Page 169 Jamie's MoF)

    Recipe feedback - I adore lasagne but haven't made it for ages and ages as I am always put off by the faff of making from start to finish and the pile of washing up that comes with it. So this was the perfect opportunity to use the spare Bolognese sauce from a couple of weeks back and turn it into a lovely midweek treat. I used ordinary cheddar type cheese, rather than parmesan

    I wasn't altogether sure about using crème fraiche in place of usual sauce but went with the flow for convenience, even though this is not very MSE and makes the dish more expensive.

    Taste test - loved every bit of it and very nearly licked the plate clean. As is often the case, the Bolognese sauce had clearly benefited from being left a while and the crème fraiche topping was far nicer than I had imagined.

    I made the cassoulet from the first Hairy Dieters book. It was very tasty but I thought it was quite an expensive meal with chicken thigh fillets, posh sausages and a large piece of gammon. My husband loved it though, probably because of all the meat in it :D. My daughters ate it but thought it was a little too spicy for them. I enjoyed it but I prefer my own version of sausage and bean casserole which works out at half the price.

    Verdict - Very nice, would make again if I could get the ingredients at a reduced price. Will give it a 9/10.

    Today I'm going to make the sweet and sour chicken fakeaway from the same book. I've made this several times before and really like it. Hubby likes it too but the girls are not too keen so they will be having hotdogs :D.
