Playa Blanca may be a bit too quiet for what you're looking for. I would suggest Puerto del Carmen or Costa Teguise in Lanzarote instead as they are both a little livelier.
Also worth considering would be Corralejo in Fuerteventura, decent nightlife and lots of places to eat and drink and fab beaches.
As others have said Playa d'en Bossa is a good choice it's not over the top lively but does have a great beach and Ibiza is really easy to get around and explore too.
Other places would be Greece - try looking at Hersonissos or Aghios Nikolaos in Crete, Tingaki / Kefalos in Kos, Tsilivi in Zante or Sidari in Corfu.
Or Turkey, try Bodrum or Icmeler, both good resorts with plenty to do but the beaches are not fantastic but still great for chilling out and plenty to do nearby.
Spain has some good resorts too, possibly Fuengirola, Benalmadena, La Pineda or Tossa de Mar all have plenty going on without being over the top.
For specific hotels take a look at the Blue Marine Resort & Spa in Crete
The Diana Palace Hotel in Zante
The Sol Lanzarote in Puerto del Carmen
And lastly the Sirenis Club Hotel Tres Carabelas in Ibiza.
