As long as the component cables (not composite) are reasonable quality, the image quality is much the same as hdmi as it supports 1080p although not all devices support 1080p over component, the cable is more fiddly and it doesn't support HDCP. Capture devices do not support HDCP over HDMI so to capture from the PS3 you have to use component.
