You have to be careful you aren't being to faddy. Avocado bathroom suite anyone?
We ended up with thin pine (unpainted spindles) and an oak hand rail. Cash was getting a little short by the time we got to the staircase. I wish we had put an oak staircase.
Now skirting boards have you thought about them? We painted ours and I regret that so much along with all internal doors also painted (wish we had specced them up a bit too and got oak ones).
In this day and age wou want something that will look clean and tidy and require as little work as possible, unless of course you have staff :rotfl:0 -

to comply with building regs the handrail needs to be a height of between 900mm - 1000mm so you could design your stairs around this height0

Look at it this way - you could either paint the stair walls/sides gloss, in which case they are easily cleanable/wipable, or you could elect to repaint every year or so. You don't know whether the kids will actually do much damage or not until you try. And repainting such a small part wouldn't be much of an expense and you could easily do it yourself! And you're right that this will not be worse than the rest of the house...

I like your examples and the right stair will definitely add a lot to the house.0
