How quick and easy to switch current a/c to Santander 123?

The 7 days have been completed, the issue is the switching arrangement is supposed to include contacting the companies and organisations that make payments to myself, so they start to make payments to the new account rather than continuing to pay to the old account (for up to 13 months). While I appreciate the previous comment that they have up to 13 months to notify the payers, or more accurately, that the old bank has to forward payments for 13 months. The issue is one of not knowing if Santander are doing anything, or just ignoring it.

My understanding is that banks don't start notifying companies paying into your account until the next payment is received.

The reason for this is that payments into your account are different to direct debits, in that they don't appear on a central list.

Just because XYZ company paid into your account last month, what's to say they will again?

So when your next salary payment is made (to your old account), it will be redirected automatically to your new one, and then at that stage your employer will be notified.

6 weeks on and still one dd to be set up. I've been charged £x by one dd that was missed by Santander because it had to be paid by debit card to avoid disconnection, are Santander obliged to compensate me?

No they are not but if you file(d) a formal complaint, they might wing £20-£30 your way. Difficult to say how likely this is since we do not have the details on why it took/takes so long, and whether you have already complained or not.
