Hi all, I have 3 children that take packed lunches to school, I pack with the usual sandwich, crisps, fruit, yoghurt, wanting now to scrap that and do pasta or rice and a yoghurt, does anyone have any recipes other than pasta, sweet corn, tuna and mayonnaise?

What do your children like to eat? :P
I make pasta salads with ham, chicken, pepperoni, chorizo, cubes of cheese, halved cherry tomatoes, sweetcorn, diced cucumber, diced peppers, basil leaves, celery, grated carrot- dependent on what each child likes and what I've got in the fridge! Dressed with mayo/ salad cream/ pesto/ oil and vinegar as appropriate.
You can make a quick and easy dressing with ketchup, vinegar and a little oil- the children can mix it up if you like to get them involved.
For a rice salad I'd do any of the above veg, chicken or ham plus dried fruit and some mild curry powder. Dress with mayo/ some of the cooking water/ oil to moisten it.They call me Dr Worm... I'm interested in things; I'm not a real doctor but I am a real worm.0 -
My two love the following they are older now and still like them:)
Cooked pasta, cooked chicken, crispy cooked bacon, basil leaves shredded, grated Parmesan cheese and toasted pine nuts mixed with mayonnaise sprinkled with mild paprika.
Cooked pasta, cooked chicken, cherry tomatoes quartered, sliced spring onions mixed with mayonnaise sprinkled with chopped chives.
Potato salad, cooked potatoes cubed, pineapple pieces, boiled egg, spring onion, tomatoes quartered, chopped apple and celery mixed with Mayonnaise sprinkled with parsley.
If you have a bbq I make more veg kebabs ( onion, mushrooms, peppers) and cook an extra chicken breast chop all up when cold add to pasta with mayonnaise and paprika, my personal favorite as the bbq flavor really comes through.
If you make a large bowl and it gets a bit stodgy, revive it with a splash of milk for all the above.
As we are heading towards winter, a flask of homemade soup is a good one as are hot dogs (in a heated flask with a little brine) serve with bread rolls and ketchup.
I hope that I have given some recipes of use, one last tip when I collected my two from school I had a sliced apple refreshing and takes the edge off hunger.
Good luck it's not easy I know0 -
