Meal Plans WB 2nd September

    Umm, not exactly! Its adapted from a Hairy Dieters recipe but I'll give it a bash re quantities :cool:

    Fry off chopped chilli & chicken
    Add tin of coconut milk, 6 kaffir lime leaves, 2 tbsp fish sauce, pinch of sugar, 2 tbsp Goan curry paste & about 1 tbsp crunchy peanut butter
    Simmer & add sliced peppers and mange tout
    Simmer a bit more til thick and add dessicated coconut, serve and top with coriander

    Could add some roasted peanuts too I guess, might try that next time :p

    Can I ask where you get your Goan paste from please as can't seem to find it online and doubt any of my local shops will have it.

    Monday - chicken in passatta sauce with olives, peppers and shallots and rice
    Tuesday - haddock fillets, potatoes, carrots, broccoli and green beans
    Wednesday - stuffed mushrooms, Mediterranean vegetables, green beans and potatoes
    Thursday - pasta, onion, pepper in philidephia cheese and a salmon filet
    Friday - madras curry and rice (tesco ready meal for 2 ;)(wine night:j)
    Saturday- chicken breast wrapped in bacon, Mediterranean vegetables and potatoes
    Sunday - salad, quiche and a Cous Cous salad.

    Hi everyone i followed this thread ages ago i'm so glad to see that it's still running... I need to start menu planning again and this page always inspired me, so tomorrow i'm doing a cupboard and freezer review and will try to create some meals from there.....
