vegetables - any uses for the leaves?

    we usually cook the smaller, tender ones from nearer to the in side along with the rest of the cauliflower. I'd think the outer ones could be a bit tough but I may well be wrong!!!

    Hi Liz,

    They will make a great vegetable stock or if you have any leftover cauliflower they make a great addition to cauliflower soup.

    never knew u could eat the leaves. we only ever use the white bit. but them we only ever eat it as cauliflower cheese. yum.

    Mine made simply disgusting soup .. and stank the house out.

    I use my leftover cauliflower leaves in the compost heap (along with the inedible soup), so they aren't wasted - but even the hens turn their beaks up at them.

    lol susy, my hens do that too! I was told to tie string onto them and it would be a great toy... seems that where I read that was wrong, like most things apart from the mirror, which tbh, probably amuses me when i watch them with it, more than it does them!
    I am for composting, after I use up the stalks in a soup!
    sorry to not be more help, trust me, I throw almost nothing away, but will read on to see what others come up with!

    I do what my mum always did, which is steam then along with the cauliflower (the larger leaves can be stripped off the tough middle stalky bit), and shove them in with the cauliflower cheese. They come out lovely, especially if they've sat at the top with some cheese on them. Yum!
    Could also be stir-fried, or possibly treated as cabbage I guess?

    Further on using leaves generally - I've seen a YouTube clip about sauteing radish leaves - on the menu for tonight to try out:D
