    I've never made nut roast. Anyone have any good recipes for it? I can just sub gluten free flour, etc as I do with yorkies :)
    The nut loaf I make is as follows

    13 oz nuts - I use a mix of walnuts, cashews, almonds and brazils, in roughly equal amounts
    7 oz breadcrumbs - I assume you can get gluten free bread?
    Half a large onion, diced small
    2 eggs
    Milk
    Butter
    Plain flour (you mention you can get suitable flour for your needs)
    2 oz grated strong cheese (I use extra extra mature Cheddar) Use extra if you wish to make it really cheesy tasting.
    Dried mixed herbs

    Grease and line a 2lb loaf tin
    Sweat the diced onion in a little butter in a LARGE saucepan, turn off the heat, add a tablespoon of flour and enough milk to make a stiff mix. Turn the heat back on low and mix this together thoroughly; then remove from heat and leave it to cool.

    Meanwhile, wuzz the nuts and bread in the food processor, and mix in the grated cheese and the herbs.

    Once your onion flour and milk mix is cool, beat in the eggs.

    Mix in the nuts etc (that's why you need a LARGE saucepan!!)

    Turn the mixture into the loaf tin and bake for 40 minutes at 180 C.

    Allow to cool slightly before turning out of the loaf tin and slicing.

    How about this nut-free roast? It is very tasty...

    Mushroom & Lentil loaf

    125g dried green lentils
    250g mushrooms sliced
    1 onion chopped
    2 cloves of garlic crushed
    1 egg beaten
    112g grated mature cheddar
    1 tsp of marmite
    0.5 tsp of dried mustard powder
    0.5 tsp dried rosemary
    0.5 tsp dried thyme
    Salt & pepper to taste


    Boil the lentils for 20ish mins then drain.
    Meanwhile fry the onion, mushrooms & garlic in fry light/olive oil until cooked.
    Mix everything up in a bowl.
    Grease a loaf tin then pour in the mixture.
    Bake in the oven for 30 mins at 200.
    Can be frozen.

  • My hubbie is veggie, what about a gluten free wellington gf pastry with whatever veg combination, if you eat cheese you could add that to. I also do red onion and goats cheese tarts. Roasted vegetable terrine maybe another alternative.

    Fallafel goes really nicely with a roast. It's what I usually have when I do a roast.

    It's hardly traditional in any sense, but I find vegetable curry goes well with roast potatoes.

    Any vegetables you like of course though my choice would be

    Sweet potato
    Onions
    Mushrooms
    Peas
    Sweetcorn
    Chick Peas or Red Kidney Beans

    I am not a vegetarian, but I'd be happy with just a GIANT yorkshire filled with all the veggies and lashings of gravy.
