Vegetarian Sunday Dinner Ideas

I'd love some veggies ideas to go with sunday roast vegetables and yorkies. I can't eat any faux meat including sausages (they contain wheat and I'm allergic) unless it's home made, which means I need to think outside the box a bit more. It'd be cooking for me and (also veggie) dh.

    I second the nut roast (you'd need to adapt a recipe to your dietary needs) My aunt always used to make one when we were kids for my cousins who were veggie. Don't forget the (veggie) gravy!

  • I've never made nut roast. Anyone have any good recipes for it? I can just sub gluten free flour, etc as I do with yorkies :)

    A veggie friend used to make a great roast dinner with a cashew nut loaf, but it was parsnip based. My OH, a confirmed carnivore, loved it too which is saying something ;)

    I love stuffed aubergines, baked in the oven. Can't remember the last time I made a nut roast, must look out some recipes and do one soon.

    Hi, my OH is a veggie and I have a wheat allergy (need an epi-pen for it). The one thing we cook is the delia smith cheese and parsnip roulade. http://www.deliaonline.com/recipes/type-of-dish/party-food/roulade/cheese-and-parsnip-roulade-with-sage-and-onion-stuffing.html

    I use gluten free bread to make the breadcrumbs and dove gf flour to thicken the sauce. Its fantastic, in fact he always has it christmas day (I eat meat but I always have some to!) I just use strong cheddar as I cant find sage derby cheese.

    It also freezes well so I tend to make one and cut it into portions.

    Starter

    clear soup or Hors D'Oeuvres - egg mayo, baby beetroots, artichoke hearts, cooked baby broad beans, little tomatoes,black and green olives, potato salad, sliced peppers.
    Main Course

    A savoury rice dish, the recipe I have is for tomato rice, but I would think flavourings you like would be in period, Cauliflower Cheese, a vegetable hot pot and some nice lightly steamed green broccoli or spinach and green beans.

    Pudding

    Baked apples with crystallized ginger and some syrup from the jar,and cream.


    Coffee and nice chocs to finish

    The cheese and parsnip roulade posted above is absolutely AMAZING. My aunty always makes it as the veggie alternative at Christmas, except she alters the recipe - she uses filo pastry (I assume this could be adapted/bought to suit your dietary needs) layered with the sutffing and filling mixture. It's a big hit even with the meat eaters. I do have proper instructions if you're interested!
