    been googling some mushroom soup recipies softpad
    & have used/seen most of them before prob same as you have,
    but found this one & don't think/can't remember/not seen before & it looks easy to do :j

    Prep Time: 15 minutes
    Cook Time: 35 minutes
    Total Time: 50 minutes
    Ingredients:

    1/2 lemon
    14 oz/400g mixed fresh wild mushrooms, cleaned
    7 oz/200g button mushrooms, minced
    3 shallots minced
    ½ stick /50g butter
    3 ½ fl oz/100ml white wine
    18 fl oz/500ml vegetable stock
    1 clove of garlic, crushed
    Salt and pepper
    7 fl oz/200ml heavy cream or crême fraiche

    Preparation:
    • Squeeze the lemon over the mushrooms.
    • Melt the butter in a deep saucepan, add the minced shallot and cook gently until translucent,
    • approx 4 – 5 mins.
    • Add the mushrooms,
    • cover the pan and cook gently for 10 minutes until the mushrooms have given up all their juices.
    • Add the wine, the stock and the garlic clove.
    • Season lightly with a little salt and pepper.
    • Boil gently for 10 minutes.
    • Add the cream and cook for a further 10 minutes.
    • Adjust the seasoning and serve in warmed bowls.
    This soup can be made in advance and allowed to cool before covering and storing in the refrigerator.

    To freeze, prepare the soup until the addition of the cream, allow to cool, remove the garlic and freeze.
    Finish with cream when required.

    Note: If fresh wild mushrooms are not available use dried.
    To prepare; rinse the dried mushrooms in fast running cold water,
    then soak in warm water for 20 minutes.
    Proceed as for fresh mushrooms,
    reserve the soaking water and add to the stock for extra flavour.

    Hi everyone,

    Hope you have all had a good day. We had another tiring one visiting some local towns. We spent a lot of time at Kidwelly Castle which was great fun to climb and explore! The weather wasn't like yesterday but it was fine for the time of year. We had a nice meal at a Beefeater so that DH could use the free steak voucher I won last week. I had salmon followed by Blueberry Cheese Cake :D
    Hoping to go to St Davids tomorrow.

    Firefly, when entering the postal comps, can you do AIOE if they all have the same addresss (ie, all the Daily Star, Express, Sunday Express etc ones)?

    I always do,

    same with daily express..
    ie: taken from ness's postings..
    You must send a separate postcard for each competition.

    Hi all, dont post in here often but so wish i had some booze in the house to calm my nerves, just had the ambulance out to my hubby as he had a anaphylactic shock, i have never seen him so ill :(

    He had the same reaction on sunday morning and had to rush to hospital, was given steroids and antihistamine tabs but tonights was the worse i've seen him, cant stop shaking :(

    Ahh, thanks Firefly. And what a pity, but hey ho. Still gonna give them a go. Also realized there a lot more postal entry comps for fishing stuff, so going to give them a go too. :D
