Pork Hocks - how to cook / recipes please

Options
I have seen these for sale at the butchers on the market this morning - really big meaty specimens for £1.50 each . . . . seemed like a real bargain even though they all had a big bone through the middle ....but I had to resist buying as I have no idea how to cook these :(

Are they the same thing as the ham hocks?

Can they be cooked and the meat used cold for salads??

Has anyone tried these ?

Firstly, I am going to move where you live as these cost me a minimum of £2.50 each! I tend to slow cook mine or cook it in my pressure cooker with mixed herbs and vegetables. It is absolutely lovely and tastes wonderful. It can be eaten cold with salads or put in sandwiches, I may have to go and defrost mine now as that has made me want some :rotfl:

I boil mine with stock veg, pepper corns, bay etc.
When fully tender cool and strip all the meat off. I love the meat off a hock but find it to have quite a lot of nasty bits.
I then sweat off some onions, add garlic, tin of toms, a couple of tinned of beans, usually cannellini, kidney or borlotti.
Finally a ham stock cube, mixed herbs, shredded hock meat and some water if it needs it.
It makes a watery type soup. Just had a portion out the freezer for my lunch.
Opinion on everything, knowledge of nothing.

I haven't bought any for ages but they are good value. My favourite recipe is pork and bean casserole, which is so easy and tastier than it sounds. I cut the meat off the bone and trimmed off all fat, then browned with onion. Then it was all thrown into a casserole or slow cooker with sliced carrots and a tin of baked beans, plus some stock. The original recipe also has sliced green pepper, which I some times add but cook with the onion first to make it sweeter. Then it's just cook slowly and serve with baked potatoes.

Thank you for all the great suggestions - I have a slow cooker so I'm going to try a couple next week.

We are very lucky with our market - still has a couple of old fashioned butchers where you can still buy offal & stuff like oxtails, pigs feet, savoury ducks, tripe, tongues, hearts - but I had never noticed the pork hocks before today and as there was an awful lot of meat on them for £1.50! :)

pork hock works well as pulled pork. Put in a slow cooker, cover with coke and cook on low for about 8 hours, shred the meat and coat in bbq sauce
  • These are excellent, I boil mine up to make a stock and strip off the meat which I put in a bowl with some of the stock and put a saucer on it to press it down with some weights until cold. Put in the fridge and you can turn it out when set as it is all moulded together and then you can slice it and serve with chips and salad.

Also use the stock for soups so you get 2 meals out of it.
