  • thanks again boo81 could you give me recipes for the bolognaise, pasta carbonara and tuna pasta. How easy would these be to make considering I have to go and pick her up from airport?

    Carbonara I can make all in the time it takes the pasta to cook, thats with practice but you can do some prep beforehand to make it easier.

    The tuna pasta you can cook the sauce and pasta beforehand and then put in the oven when you get back.

    Bolognaise you can cook again and just reheat as you cook the fresh pasta.

    Bolognaise:

    1/2 pack of beef mince
    1 onion
    1/2 grated carrot
    1/2 garlic clove, chopped finely
    1/2 tsp mediteranean herbs (sold as this in the supermarket)
    1/2 tin chopped tomatoes
    2 tbsp tomato puree
    Glass red wine
    1 oxo cube
    Splash worcestershire sauce
    Oil to fry
    Seasoning

    Heat the oil and add the chopped onion and garlic. Cook on medium heat until softened and just starting to brown. Add the meat, I prefer to break up with my hands. Cook until the meat is brown and add the carrot. Cook for a further minute or 2.

    Break up the oxo cube and sprinkle over the meat, mix thoroughly. Add the tinned toms, puree, herbs, seasoning (be generous with the black pepper), wine and worcestershire sauce. Keep simmering ie not boiling mentally but bubbling away. Leave for at least half an hour, ideally an hour. Stir ocassionally and if it goes at all dry add a little water.

    Cook the pasta according to instructions, serve with the bolognaise and a sprinkle of cheese!

    Carbonara

    3-4 rashers of smoked bacon chopped or a pack of pancetta (does taste the business!)
    30ml white wine
    2 eggs
    60ml double cream
    30g parmesan
    Black pepper

    This one you can prepare in stages. Before you cook anything chop the bacon if your using. Put the cream, eggs, black pepper and cheese into a bowl or wide jug and beat until thoroughly combined. You can store this covered in the fridge for a few hours, just make sure you beat again before using and bring up to room temperature!

    While the pasta cook (I find tagliatelle the best personally, 9oz for 2 people) fry the bacon in a little oil, if using pancetta dont add oil as produces more of its own fat. When crispy and browned add the wine and continue until goes thick and syrupy. Put aside amd wait for the pasts to finish.

    You need to make sure you do this bit quickly as if the heat has gone out the pan and pasta it wont work too well. Drain the pasta but dont leave bone dry, put pack in the pan but not over the heat! Add the bacon and wine mix and the cream mix and combine with the pasta. Just keep stirring and it should thicken, if it stays watery stick on a very low heat beneath the pan. Basically too much heat will cook the egg and make it more like scrambled eggs than a pasta sauce!

    Tuna pasta

    1 tin tuna
    1 onion
    1/2 tin tomatoes
    1 tbs tomato puree
    1/2 clove garlic chopped
    Sprinkle of Mixed herbs
    Grated cheese-parmesan or cheddar
    Breadcrumbs
    Seasoning

    Fry the onion and garlic in a little oil until soft, add the tinned tomatoes, herbs, seasoning and puree. Simmer until it thickens, 10 minutes will probably be fine. Keep until your ready to cook the rest.

    Cook some spiral or shell shaped pasta according to instructions, once cooked drain and add the sauce and flaked tinned pasta. Put in a glass dish and sprinkle breadcrumbs and cheese on top. Cook in the oven at 180c until brown (20 mins ish).

    You can add other veggies such as red pepper or courgette to this, just add when your cooking the onion and garlic. Tinned sweetcorn is beautiful, just add when you put the tuna in.

    Shepherd's pie will be just as tasty tomorrow and it won't come over as lazy. If you want it to come over as a bit posher, do some fresh veg on the side (carrots or peas are easy and classic). Sometimes all we want is some good, simple home-cooking when we've been away!

    If you want a simple desert to knock up, how about whipping up a fruit salad? If you don't put apples or bananas in, you won't have to worry about anything going brown. Some vanilla ice cream or plain yogurt and it's done. Simple, tasty and can be as classy as you want, depending on what sort of fruit you have.

    A quick pasta dish maybe?

    Can of tinned toms, add herbs, teaspoon of sugar, bit of salt, pepper and worcester sauce then add some bacon chopped up.

    Or fry some chopped onions with a bit of garlic, add sliced mushrooms, chopped bacon and cream, reduce down then add the pasta to the pan. Mix together and serve
