    Salad bars in waitrose seem to have a jumbo couscous with chickpeas. Its lovely, Id love to make this myself- but has anyone seen this jumbo cous cous anywhere?

    I've tried making houmous a couple of times and it just doesn't taste like the stuff you buy. Not sure where I went wrong, but it had a horrible taste (although not much of a taste!) and texture and ended up in the bin.
    I find buying the chickpeas and tahini (and other stuff) to make it also makes it more expensive.

    So, can someone tell me where i'm going wrong?!

    I haven't had any for a while, but love it with pitta breads. Mmm!

    I think you need to be a lot more generous with the tahini, I generally use a ratio of 1:4, so 25% tahini. Do not stint on the garlic or the lemon juice. My local Turkish grocer sells the tahini much cheaper than the supermarket or health-food shop and I find making it at home cheaper than shop-bought but then I use the dried chick-peas.

    I have mashed the chickpeas with a fork but I now use one of those hand-blender thingys and it comes out silky-smooth. Yummy

    I adore chickpeas. They are rich in protein, complex carbohydrates, b vitamins and fibre, and lots of other goodies. AND... they taste good!

    My favourite way to do them is to soak them then boil them until they are cooked, then sautee' them for a short while in a pan with olive oil, garlic and rosemary, making them an excellent meat substitute.

    I agree with Bitterandtwisted- you need a reasonable amount of tahini and lemon juice- I add paprika too if it's just for adults- you can add other flavourings like cumin or coriander. A hand blender gives it a much nicer texture than mashing.

    I keep it for a few days in the fridge- I'm not sure how quickly the home made stuff should be used up?

    I've only just discovered chickpeas as I've just started making my own houmus.

    I read on here somewhere about roasting chickpeas with olive oil, salt, chilli, garlic etc. to make a snack like roast peanuts. Has anyone tried?

  • I've not tried making the roasted ones myself, but do buy them roasted in curry spices from my local indian shop. They're yummy!
