    Hello everyone. Have had just over a week of soup or salad (while DH has hm ready meals) and no wine, but it's been worth it as I've lost about 4lb so far. Next week is going to be a mix of eating properly and eating lightly.

    So.
    Sunday: Smoked mackerel (I'm not sure I'll be able to eat it) salad for me, hm mutton casserole for DH
    Monday: Rib eye steak, with Delia's oven risotto, mushrooms, and lots of steamed veggies
    Tuesday: Steamed veg or salad for me, Beef casserole for DH
    Wednesday: Chicken Patak's with hm naan or chapatti
    Thursday: Fish of some sort
    Friday: HM mutton burgers
    Saturday: Shepherds Pie

    well I would be eating more salads if my rocket would just grow a bit quicker - was a bit late putting it in and its only about 2 centimetres tall so far :rotfl:

    I didn't meal plan last week with it being the holidays and I really struggled, don't think I'll be doing that again!!!

    Anyway as I have learn't my lesson here's my meal plan for this week:-

    Sat - We had a BBQ!!!
    Sun - Chicken, salad & new pots
    Mon - We going out as it DS birthday
    Tues - Jackets Pots & filling
    Weds - Chilli & Taco's
    Thurs - Pie, Pots & Veg
    Fri - Chips

    We're on a "use up" mission this week, because we go on holiday for 2 weeks on Wednesday 13th (early morning), so I am saving money and clearing through the freezer in advance...;)

    Anyway, here's the plan:

    Monday - Roasted vegetables (courgette, cherry tomato, peppers & mushrooms) with pasta and boursin
    Tuesday - Chilli with pasta and broccoli
    Wednesday - Sausages, potatoes, Yorkshire puddings and onion gravy with veg (cauliflower, carrots & peas)
    Thursday - Spanish omelette to use up eggs, new potatoes and red/green/yellow peppers (with various other veg!) + salad
    Friday - Chicken in some form…maybe a curry with rice or in a paella dish?!
    Saturday - Pizza & garlic bread (homemade) with salad
    Sunday - (Local Mexican restaurant for Father’s Day with M&D – we’re celebrating a week early because we won't see him on the actual day!:o)
    Monday - Freezer surprise – but most probably chilli again in some form…pasta is current favourite but we may diversify and splash out on a couple of jacket potatoes!
    Tuesday - Out for dinner with Mr P’s M&D

    Fingers crossed we stick to it!:D

    Im am so late with this but am definately back on the meal planning wagon as now have a kitchen to cook in

    Mon - was ham salad
    Tues - shepherds pie
    Wed - roast pork
    Thurs - chicken portions chips/wedges
    Fri - chilli
    Sat - spicy chicken wraps

    Ooh I like meal planning, keeps me motivated. I cook pretty much everything from scratch and if I dont plan I get sidetracked and dont cook anything!:

    Mon - huge mushrooms stuffed with bolognaise sauce and cheese
    Tue - veggy curry with brown rice and naan bread
    Wed - omelette of some kind
    Thur - roasted veg pasta and bacon
    Fri - burgers with mash and salad
    Sat - chicken casserole or a pie
    Sun - Spaghetti bolognaise

    Ooops late again! ;)

    Sun was roast Gammon with roasted veg (aubergine, carrot, sweet potato, red onion, red pepper and cherry tomatoes) which was yum!
    Mon was HM chilli
    Tue Gammon Risotto (using leftover gammon and whatever veg is in the freezer)
    Wed Omelette
    Thur Rice and prawns
    Fri HM Lasagna (from freezer)
    Sat Cheesy chops and chips (and veg)
    Sun Chilli wraps

    Which reminds me, will be needing more veg - seem to be getting through it faster than ever! Though shan't complain about that.

    to use up lamb - how about morrocan lamb??

    Dice 1 onion, 3 carrots, 3 stalks celery very finely, saute off with 2 crushed cloves garlic, season with salt + pepper. Take out of pan, add a little more oil, brown lamb cubes. Add veg back in + add 1/2 tsp cinnamon, 1 1/2 tsp tumeric, 3/4 tsp Paprika (or cayenne pepper if you like it spicy), 1/2 tsp ground cumin seeds, chicken stock/water to cover. Simmer, adding more stock/water as necessary to keep covered until lamb is tender, then turn up heat to thicken sauce slightly. Add a handful of raisins + slivered almonds, serve over plain cous cous or roasted potatoes. It should be a bright yellowy/orangey colour; you can adjust the seasonings to suit your tastebuds. Can be made in a pressure cooker/slowcooker/ in the oven instead of on the hob.
