Rebooking cancelled flight

My Ryanair flight from Limoges to Stansted was cancelled this morning because of the French Air Traffic Controllers strike. Ryanair have sent me an E Mail saying I can have a refund or rebook the flight.

I have no intention of travelling this week, but if I go through the rebooking option, will I get to choose my dates of travel or does Ryanair give me a date which I have to accept and no refund issued if I don't take it?

I am sure I will be traveling again soon in a few weeks so will I be able to rebook for that date or get a refund and have to buy my ticket again?
