Twice a week I give my veggie children a breakfast of sausages, baked beans, mushrooms and toast. They do not like eggs or grilled tomatoes. However, they are getting fed up of baked beans.I would like to make something similar as they need liquid to stop the meal being too dry.
I make refried beans but they would be too dry. Does anyone have a good recipe for mushy peas that would not be too dry, or any other suitable recipes made with kidney bean or butter beans as they love these. I would like to keep it as healthy as poss.
Many thanks
Clare

You mention they don't like grilled tomatoes... What about tinned plum tomatoes? I know most people will say a tomato is a tomato but I personally can't stand grilled tomato but love tinned plum tomatoes and the juice that they come in is a nice accompaniment to a cooked breakfast
You could maybe try changing the flavour of the beans with a bit of paprika or even adding a bit of BBQ sauce while you're cooking them?
Dependent on the protein content in the veggie sausages, you cold maybe give them tinned spaghetti if they like it? Maybe you could give them an extra half a veggie sausage each on day they have spaghetti if protein is a concern.
Sorry I can't be of any help with alternative recipes though x0 -
I make my own baked beans (sort of) which are less sweet and more of a 'grown-up' flavour which might be worth a try.
I think it's 6oz haricot beans soaked overnight and cooked in 14flox stock (I use Vecon paste - it needs to be a good dark stock really). Simmer until tender then stir in a large spoon of tomato puree and the same of pesto.
That's it. Done! They're also a good base for a shepherd's pie.
Made myself hungry now.0 -
ooooh, mashed butter beans is lovely! not sure it would suit a cooked brekky though. Why not try tinned tomatoes? I personally prefer them to Fresh.0

I'm another one who'd try tinned tomatoes or failing that if I wanted 'liquid' a squirt of ketchup.:p
What about tinned spaghetti to accompany it? I think that goes well with sausages.0 -
I like to whizz up a tin of 55p mixed beans in taco sauce from Tesco, for my version of cheap refried beans. Stays saucy, not dry at all
I like to add some garlic in to but I am a bit of a garlic monster

Gigantes plaki (greek style butter bean in tomato sauce)?

Or, no beans but still taking away the dryness, homemade salsa? This one isn't spicy - just tomatoes, onion, garlic and a bit of lime all whizzed up.

We regularly have home made 'spicy beans' based on this - but using a tin of tomatoes generally because I can't be too fixated on the actual ingredients in a recipe.0 -
Don't know if it's what you're after but my veggie friend likes to dry-fry onions and mushrooms then add to baked beans and put on marmite on toast, topped with a sprinkling of grated cheese0
