Now that Orange and T-Mobile have merged into EE, does this mean that a phone originally locked to T-Mobile will now work in a phone originally locked to Orange and vice versa as they are now both the same network?

It depends on the phone, with newer phones this is generally true, to be 100% certain you would need to test (or get someone else to test) the phone with both SIM cards.
