Hi,
I also made the chocolate chip cookies and they were delicious. As it's half term I have time to batch bake and was wondering if these could be frozen.If so do I then just thaw at room temperature? I imagine them going soft?

Thaw at room temp, if they should be a little 'soft' pop them in the oven for a minute or two to crisp back up~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~

I have a brilliant old Mary Berry Cake book, I regularly make tray bakes of different varieties (the kids love decorating them!), cherry cake, coconut cake (very easy recipe), flapjacks, date cake, shortbread, Anzac biscuits, gingerbread men, Borrowdale tea loaf, Delia Smith choc fudge cake.
I wonder why my diet isn't working?A minute at the till, a lifetime on the bill.
Nothing tastes as good as being slim feels.

I could cry! When I was a little girl I would go to stay with my Grandma - we always made these together. She had this old cook book (handwritten) that was falling apart at the seams and this was one of the recipes in it. I just loved them, as I got older when I visited I would make them on my own and leave her and Grandad with them. I wrote the recipe down - but when we moved house 10 years ago I managed to lose the recipe.... I knew that two of the ingredients were the same - but I could not remember if it was the butter and sugar, or flour and sugar etc etc.

I've just got back from work, here is the recipe, it is from the 'Sainsbury Teatime Favourites' recipe book which is 24 years old, I 'borrowed' it from Mum when I left home!!Coconut Cake
Oven 190c/Gas 5
Grease and flour a 1lb loaf tin
2 eggs
6 tablespoons milk (approx)
125g caster sugar
125g butter
75g dessicated coconut
175g plain flour
2 teaspoons baking powder
Topping
2 tablespoons dessicated coconut
1 tablespoon caster sugar
Break eggs into jug, lightly beat, then add milk to make up to 150ml
Mix in the coconut and half the sugar, leave to stand for 30 mins.
Sift flour and BP into bowl, rub in the butter and stir in remaining sugar
Add coconut mixture and stir together
Put into tin, mix together sugar and coconut and sprinkle on top
Cook for 45-50 minutes until firm to touch
Cool on wire rack
Lovely with a cuppa (you can serve with butter and jam but I've never done this)A minute at the till, a lifetime on the bill.

I've just created a traybake (at least I think its an original) which was seriously nice, and I think may become a favourite. Took about 3 mins preparation time and 30 mins in the oven.
I put 6 oz butter, 6 oz caster sugar, 8 oz self raising flour, 1 tsp baking powder, 3 eggs and 3 tablespoons of milk in the mixer all together, and grated the zest of a sad looking orange over the top of the mix. Whizzed it together until all combined, then mixed in 100g of milk choc chips and baked at GM 4 for 30 mins.
Came out as orange choc chip cake slices.
Hubbie, DD and I thought they were great. DS who is a big chocolate cake fan and pretty disparaging of any other kind of cake said they were "good but not excellent" but that didn't stop him coming back for more!
I have just made these as buns - makes 24. As dds1 is lactose intolerant, he can't have jaffa cakes anymore so these will be perfect. I used vegan marg and a bar of dairy free choc which I pulverised with the rolling pin. I also used orange extract which I had in.
I have just costed them and even with the specialist ingredients they work out at about 10p per bun. In Sainsburys 2 small dairy free choc orange bars cost £1.95!
