good mozzarella is one cheese that rarely comes up cheap. i've found the best so far in my local supermarkets is the garofala bufala, and that's normally about £18 a kg . i rarely buy it due to the cost - and that's probably just as well due to the fat content! by golly though it's yummy, i could eat it all the time...

What is the pale yellow compact brick of mozzarella then that I see in Sainsbury's ?

Its a serious question as I always thought the brick was mozzarella but in a different form.

This gives some info about mozzarella, I don't know why that cheese, not made in Italy, is allowed to be called mozzarella, while it obviously isn't. It's a bit like asking for Cheddar and being given Cheddar singles slices instead....

the colour of the mozzarella/cheese suggests the type of environment it has been processed it, how long ago it was made and how it was processed.

Fresh mozzarella that has been just made is very white(especially the bufala one), it's delicate but at the same time has a very elastic structure.
As I have previously mentioned, the best time to consume mozzarella should be withing 48 hours after it has been made as after this period of time it starts to loose its consistency.

I haven't tried different type of mozzarella but galbani is the closest to the real mozzarella so far.
  • It is very quick & simple to make mozzarella plenty of recipes online, just make sure you don't over work it or you will end up with a block of rubber resembling the Danish stuff. Full fat milk makes a softer, creamier, richer tasting cheese that melts better, semi skimmed or skimmed makes a healthier cheese with a drier texture that browns more when cooked but has less flavour. You can use any type of milk except UHT, buffalo milk is difficult to find making it difficult to replicate the orginal recipe but but cows milk, sheeps milk, goats milk, powdered milk etc... all work. Four pints of milk, a little citric acid or lemon juice & a bit of rennet/vegeren will make around 1lb of cheese relatively cheaply & it will only take about 30 minutes to make it.

Asda search for Mozzarella - no smart price in this search but it'll be cheaper than 83p.

I bought three 1kg packs, cut them into 125g blocks and froze them, it worked out to 12.5p per 125g.

Bit hit and miss way of getting it though
    That is a serious bargain!

I've sometimes seen this half price at sainsbury. You can sign up to email alerts now on mysupermarket so when the price drops, you can get an alert and stock up.
