    Apart from wasting a good part of the mushroom, isn't it also wasting good money to peel it and throw away the stalks? I fully agree with everyone else who says they just need a wipe over, and I also often eat them raw in salads.

    At college I was taught to peel mushrooms but in catering kitchens and my own, just wipeover with damp kitchen paper. I take a sliver off the very end of the stalk if they look frowsy.

    I brush mushrooms with an old pastry brush, then fry in chilli or garlic butter.

    Id like the recipe for the mushroom paste :-)

    and yet I let my cats sit in the kitchen sink and walk around the worktops....... My cats are sparkling clean though. :A

    I dont peel or destalk my mushrooms, just cut off the bottom bit and wipe but sorry any cat sitting in my sink or walking on my kitchen units would be taking flying lessons.
