Mushroom skins and stalks

  • I can remember a time when shops used to sell mushroom stalks separately - presumably because they had fallen out! They were very cheap and delicious, so many people used to buy them.

    I just rinse mushrooms now and eat the lot.

    Surely if you take the stalks off and peel the mushrooms theres very little mushroom left?

    I just chop a fraction off the bottom of the stalk and trim any loose or brown bits.

    My late MIL once told me off for not washing mushrooms - 'they might have fungus on them' !!

    I never wash mushrooms. Just chop the end off. I always thought mushroom sheds were sterilized to within an inch of their lives so 'bad' fungus didn't germinate. Bit like lettuce. Most of it has never seen real dirt so that doesn't get washed either here.
    Carrots and spuds do but quite often never peeled. The only stuff I will wash is home grown (not soft fruit though as it goes mushy) if it has been splattered with mud from watering.

    You really shouldn't wash mushrooms. They are sponges and although it doesn't matter if you are adding them to casseroles they just release the water again when you fry them etc.

    I do, however, soak them in oil if I'm BBQing them on a kebab. They soak up quite a bit and it stops them burning or drying out on the BBQ .

    I've always peeled and removed stalks, it's just what I was taught to do. However recently I decided to try eating the stalks as well, and just slice them up and put them into the dish as well. They're nice! From now on I shall chop up the stalks and use them as well!

    I have never heard of peeling mushrooms! Sounds like a right fafff, surely by the time you take the stalk and peel the skin there would not be much left? Especially with button mushrooms.

    I don't wash mushrooms, they soak up the water and go slimy, I just wipe them if they need it, chop them up stalk and all, cook them then scoff them :)
