Just back from LIDL as today is my day off - £21 spent but it's all stuff that will last ages and also stretch meals - like jars of roasted peppers, salami stick, pesto, mayo, veg for roasting (I roast an entire tray then bag into 6 bags and freeze - each bag does either 2 generous sandwiches with added hummus for lunch, or, 2 portions of roasted veg pasta for an evening meal).MFW #185

usually on a fri night i will cook a pot of rice and peas, (little bag, rice, one onion, tin coconut milk, tin kidney beans or dried ones soaked) and some chicken portions (usually 2.99 for about 8-9 seasoned at butchers). does my dinner fri nght, my lunch sat and a couple plates for my son and friends
tonight i have Sweet F'k all indoors so cooked rice and peas using 1 cup rice, i tin coconut milk, i tin kidney beans, no onion :-( with a veg type curry using handful frozen cauli and carrots, i chilli, 1/4 red pepper, 3 cherry tomatoes, 2 cubed potato, tsp all purpose seasoning - delicious. = my dinner, my lunch tomorro and prob my dinner tomorr too so 3 servings generous and for peanuts0 -
Welcome FieryBlondeScot! Sounds like stretchy meals are the norm on here - I know my spag bols have been known to last... and last... and last! I will prob also add some kidney beans to the last amount leftover, and grated carrot, to make one last portion...

Come on peeps - what are we cooking this week?
Last night I cooked Tomato, kidney bean and pepperoni stew:
1 tin of red beans
2 tins tomatoes
2 onions
garlic
half pepperoni sausage (LIDL)
sliced roasted red peppers (LIDL)
£2.11 for the lot, 4 portions yielded (2 dinners). £0.53 per portion! This means last nights dinner was £1.06 plus £0.10 for 2 portions of cous cous.
I have frozen the other 2 portions for dinner later this week.MFW #185

Hiya, love the thread even though there's only one of me to feed on a pittance! How do you make tomato pasta bake without using a jar or packet mix? they are too salty and expensive for me, but had never thought of making one from scratch........

Very cheap!
I'd fry some garlic and chopped onion, add oregano, salt and pepper and paprika, add 2 tins of chopped tomatoes. a glug of wine if you have some, maybe some chopped roasted peppers too (I get mine in a jar from LIDL). Then cook your pasta.
When pasta is cooked, place in a lasagne type dish and pour half the tomato sauce over it, mix and place in oven with some parmesan ontop until melted? That's assuming you only wanted mainly tomato flavour. You can then freeze the other half of the sauce until next time.
Of course, you can make loads and freeze several portions of the sauce too ;o)MFW #185

Tonight we are having spiced cauliflower & potato soup. I had the veggies leftover from my veggie box and we are getting a bit sick of cauliflower cheese so I thought I would try something different. The receipe is from an Anthony Worrall Thompson book I have - with curry spices and coconut milk. It's on the hob now and smells OK but the proof is in the eating...:D0
