Someone drove into the back of me and is being funny about paying for the damage

Go through the insurance!
Call them now and tell them what has happened. They'll protect you. If they're unwilling to go through the insurance they must have something to hide. Even minor damage to the body of a car is costly to repair and regardless of what they say, it's never as good as the original (especially if it involves a respray)
To start with all you need is the number plate of the car that hit you. If you were stationary AND hit from behind it's the other person's fault fault no question.
I'd keep the text messages from him admitting fault, but not sure if these would hold up legally. You probably won't need them though.
Good luck!0
