Help!! What to Cook for a Dinner Party?!

- Cut chicken breasts into chunks
- Sacla red pepper pesto (not always available - the tomato one works almost as well)
- Pancetta cubes (or bacon lardons)
- Red pepper (I'd use half, but up to you, or leave out)
- Mushroom - sliced
- Spaghetti (best all mixed together with the other stuff, I find!)
I usually add garlic, tomato puree (sundried is good), finely chopped small/half red onion. A bit of red wine in it goes okay too. And bit of seasoning.
Serve with optional parmesan shavings.

Veggie lasagne is fairly foolproof and it doesn't really matter how long it stays in the oven. And it's all prepared in advance so no hovering in the kitchen. With garlic bread and a simple salad, everyone loves it0

I'd go for lasagne, served with salad and garlic bread. Can prepare it advance, you don't need to know exact numbers of people, and it's easy to make. What's not to love?0

You could get down and dirty with a couple of family buckets from KFC. That may not impress your guests though. Other posters have made good suggestions. Couple of questions though
Is it you or your OH doing the cooking?
Have you got enough prep time? Reason being is that you need at least 2/3 hours if you are making a casserole or similar unless you have a pressure cooker. With less time I would do a variety of chicken kebabs in the oven (25-30mins) and serve with a salad and some pitta breads (or other tasty breads). You don't really have time to make a dessert from scratch so how about a cheese board and a cracker selection.0 -

I've done a one-pot spanish style chicken dish a couple of times now and it goes down well...it's tasty, easy, quick, a bit different to everyday food and relatively cheap.
It's chicken thighs (I use boneless and skinless ones because I find the skin fatty and my OH doesn't like meat on the bone but you could use whole ones if you like). Rub them with a little oil, season with salt, pepper and paprika then pop in a roasting dish. Add a tin of chopped tomatoes and some chorizo sausage and sprinkle over some oregano. Just whack it in the oven for about 45 minutes or until the chicken is cooked through. I serve it with new potatoes and green beans...it all disappears every time I make it.
For dessert I'd do a quick no-bake cheesecakeCommon sense?...There's nothing common about sense!0 -
Love this classic sausage and mash recipe.
Or for something more fancy sausage and lentils.
I also make these chocolate fondants which look really amazing but are very easy. You can stick them in the freezer and even cook them from frozen. I got ramekins 3 for £1 from the pound store. I always make meringue nests with the leftover egg whites and then scoff them though
