Help!! What to Cook for a Dinner Party?!

Options
I'm having friends round for dinner this evening, it's nothing majorly formal per say, but I have nooooo idea what to cook! The DH normally cooks, but i need to go to the supermarket after work.

Any ideas would be great!! Thinking main and a dessert.

Salmon fillets in foil parcels (dab of butter, black pepper, just bake in oven), new spuds and nice veggies.

Don't know for pud, maybe a shop-bought cheesecake or similar?

Knorr Creamy Wild Mushroom and White Wine Sauce mix
    Chicken Breast Fillets - skinless
    150ml Single Cream
    Chesnut Mushrooms
    Grated Cheese
Follow the instructions on the packet
New potatoes with butter, not roast potatoes as they won't go crispy cooked in the same oven as the chicken.
Whole green beans or baby carrots with butter, or brocolli

    Dessert
Ready made or homemade fruit crumble, pop this in the oven when you serve up the main course and it will be cooked by the time you have eaten the main course and had a natter.
Serve with cream or ice cream so you are not standing at the stove

I had this the other night and it was yummy

Salmon or chicken stuffed with pesto and wrapped in prosciutto, baked in the oven. New potatoes or jackets, steamed veg or salad. Minimal prep time.

Home made chilli-con-carne is usually a winner at ours. Dead easy to make and you can make it in huge quantites easily. Make it plain and have the chilli powder etc seperate so your guests can add it to their own liking. Chuck in a big pot of rice and some nachos. Job's a good 'un! :)

I'm really hungry all of a sudden.....
  • My friends partner doens't eat fish, so that's out. And I don't eat anything remotely spicey, so something like chili is out. I'm liking the chicken and mushroom concoction though!

Is it a dinner party or is it just dinner? If it is dinner party then do wrapped chicken with posh veg and baby pots. If it's just dinner to eat together do chilli with wraps and slasa, guacamole, cheese, salad, refried beans and sour cream. looks like you spent a lot of time but is all premade (even pre grated cheese) and needs no heating up. A very sociable meal in that you just gather round and dive in.
