I am very much up for this, I will say the second I see a butchers or supermarket selling horse meat I will give it a go.

If it was grass-fed, non GM fed pref organic plain meat no additives rather than a lasagne ingredient I would eat it. I've had frogs' legs, escargots and buffalo.

A friend has a house in France. I'm tempted to ask her to get me a couple of steaks and/or some mince.
